今日約咗朋友食好耐未食過的上海菜, 揀咗天后的上海弄堂。店內唔算大, 枱櫈有點迫,幸好店員服務殷勤有禮 ,都比到位置同張凳我放包包。牆上懷舊上海照, 勾起我以前上海旅行的回憶 。小籠包四隻熱辣辣上場,即叫即蒸,皮薄同餡料豐富,多肉汁,好juicy,唔錯弄堂菜肉餛飩我心諗鋪如其名應該係招牌菜。果然八粒大大隻, 餡料足, 菜同肉比例適中。 湯底唔會太肥膩,清清地幾啱我口味。擔擔麵我叫咗小辣,麵質幼滑, 整體湯底味道可以, 不過我覺得配料方面可以落足啲例如花生和肉碎多一點,就更加好了。上海炒年糕配料有肉絲同椰菜, 好有家鄉風味,而年糕質感帶淋身,綿軟嗰種, 吸收了濃濃的醬汁 好入味。…Read More

男朋友系上海人,但我同佢其實都系食日本野多😂中菜本身要整得好就好吾容易,所以平時都少食,硬系覺得好難食到高水準嘅中菜。今日佢竟然提出話不如食上海菜,可能系耐冇食所以掛住戈份味道喇?喺OpenRice搵到「上海弄堂菜肉餛飩」,睇啲相好似幾好食🤤呢間小店最出名嘅系餛飩,款式有幾款,記起自己都好耐冇食餛飩,呢樣食物確實能夠代表香港嘅地道風味。其他就分別有小食、點心、肉類等等。已經有好一段時間冇飲養生嘅湯😅喺呢度有款響螺蟲草燉雞養生湯,聽落都覺得滋補😊飲落更加feel到滋補嘅味道,響螺同埋燉雞嘅味道濃郁又唔會太鹹,飲落去好鮮。首先叫咗個熏魚,要整到好味嘅熏魚其實真係要相當嘅技巧,所以見到都唔係間間上海菜館都有呢道菜。唔好睇隻碟好似好細咁,實際上份量都幾多😳凍食嘅熏魚,令到夏天食熱辣辣嘅上海菜當中可以清涼一下。魚肉唔會話好碎,所以零舍有咬口。上海炒年糕真係上海菜入面好地道嘅一種菜式,大小吾算好大,不過食落都飽!呢份年糕嘅醬汁味真係好濃郁,食每一件年糕都feel到戈陣醬油味😋好惹味呀,質感仲好煙韌。其他材料仲有菜、冬菇、肉絲等等,都係索曬個醬汁,好濃味,尤其係冬菇。男朋友叫咗一份薺菜豬肉餛飩,呢度嘅餛飩係真係好正宗,每一隻都好大隻😳皮薄餡靚不在話下。外皮軟軟地咁樣食完會好滿足,原本我對薺菜都一般😅佢係咁叫我試吓🙊試完之後發覺其實幾好食!個人覺得味道同白菜仔好相似,連埋豬肉食都幾配合。炸排骨其實即係我哋平時食開嘅炸豬扒,不過上海人會叫炸排骨,酥炸嘅感覺真好😆最鍾意食炸嘢🙊炸豬扒相對之下少少遜色,可能係我擺得耐咗🙊食落去唔算好脆,不過肉質結實嘅口感依然能保持。嚟得呢度就梗係叫吓佢嘅招牌餛飩,「弄堂菜肉餛飩」同其他餛飩款式一樣,都係有分4隻同8隻嘅價錢。餛飩皮薄,食落去真係一啲都唔硬😄裏面嘅菜肉有少少似一個球體,菜同肉混合埋一齊,唔會話好散修修,呢一點值得一讚👍🏼菜肉嘅味道都好食。最後叫咗幾隻小籠包,次次食上海菜都一定會食小籠包🤤佢嘅小籠包都整得相當吾錯!!外皮既濕潤度啱啱好,其實好難做到。裡面嘅肉餡好多汁勁juicy😍一啲都吾會話太乾,最緊要系啲肉吾會話又系好散戈啲,如果吾系就吾正宗喇。食完肉再食個外皮,一流。…Read More

原來「弄堂」係指上海小巷的意思。弄堂裏擺放多張與上海有關的相,我未曾去過上海,但可幻想上海那種古色古香的味道。杯上印有雞公圖案,是60,70年代基層家庭開飯必備之選。傳來濃濃頭抽味,年糕煙韌有咬口,配料如菜和冬菇吸收了頭抽的味道,味道剛好,不會過鹹。原來上海人會以高湯煮小棠菜及百頁以增加其香味,外面上海鋪多數用薄身的百頁,但煮後較易散,但這裏卻用厚身百頁,因為厚身關係,處理需時才可變得不易散,兩者都掛了高湯,入口時吃到高湯和其他材料融為一體。春卷裏的餡料有菜、冬菇、肉絲。特別之處是冬菇不是切粒/絲而是切片,要處理切片的冬菇並不容易,如果冬菇處理得不好,會令其春卷留下一種''up''味。另外,菜會在煮食過程中出現大量水,但廚師仍可避開材料的壞處,控制得宜,令我吃後感覺菜和冬菇很入味,而春卷炸得香脆而不油膩。略嫌皮不夠軟滑,但味道還是不錯。豆漿味道香濃,有濃烈豆味。酸梅湯就不太夠味了!…Read More

今晚和媽媽撐枱腳,她突然想吃上海菜,於是就來到這間位於天后的上海弄堂菜肉餛飩試一試。平日夜晚店舖都非常滿座,要小等一會才能入座,套餐性價比高,於是一人一個套餐,再加一個上海炒年糕。菜肉餛飩天氣轉冷最好來一碗暖心暖胃的菜肉餛飩,餛飩皮筋道爽滑,比例恰當的菜肉餡既不會太油膩,再配上高湯和一小撮香蔥,讓人食慾大開。上海春卷傳統上海的春卷以黃芽白肉絲香菇餡最具代表性,而這裡的春卷正是這種,一口咬下去,外皮香脆,裡面餡料冒着熱氣,吃時蘸點香醋幫助解膩。紅燒肉百頁結菜飯紅燒肉的肥肉要做到好吃不難,但瘦肉要做到不柴又不能太散就是一門功夫,這道紅燒肉口感和味道可算在水準之上,而百頁結亦同樣十分入味。黃金排骨湯麵排骨炸得金黃香酥,裡面的肉卻不會乾柴,吃完口齒留香,而麵條硬韌滑爽,湯底清而不淡,正好配撘排骨。上海炒年糕用的是偏向寧波的水磨年糕,入口不會有軟粘粘的口感,炒起來就是口感嫩滑又有點嚼勁,雖然是傳統上海菜濃油赤醬的風味,但仍能品到年糕的米香。…Read More
