Wasn't expecting much as usually Ramens outside Japan are not worth eating. Not helped by the fact that the ubiquitous and still proliferating Ajisen Ramens in this world are so disgusting, its changed me forever!
However I was pleasantly surprised by the quality of Ramen here:
1) Shio-Butter Ramen. Nice perfectly balanced salty soup/broth base, some Chicken taste (?), great butter which is barely salted but has a nice long, cultured butter like finish, although slightly too 'beefy' in taste but that's also its positive character? Same as the ones in Hokkaido.
Noodles are very good, one of the best I've had not just in HK, but including Japan. Actually has noodle taste, with a springy and also chewy texture. Just the right thickeness.
2) Miso-Butter Ramen. Very light miso taste which is probably mixed with the Shio soup base, and has some sweet corn flavour in the background. Probably not enough miso taste for people used to darker Miso based ramens, but remember that in Hokkaido, they have several interpretations of Miso ramens as well.
3) The Chashu (Char Sius) in the noodles are also very good quality. Nice balance between fat and meat ratio, has a soft texture and also pork taste. Very unlike most other Chashus served in other Hong Kong ramen shops - here it is completely Japanese authentic in taste.
By the way, Chashu in Japan's ramens are mostly 'boiled'... so I don't understand why people complain it is nothing special and its like boiled pork - its supposed to be that way!
4) Gyozas - not bad, but slightly too oily. Gyoza skin is definitely Japanese type, with a chewy texture that is so unlike Chinese ones. A lot of shops in Hong Kong use the wrong, Chinese gyoza skins to make the Japanese gyozas. Here its authentic, although the feelings had slightly too much cabbage taste for my liking.
Overall, very good Ramen experience, albeit a bit oily.
I heard a lot of HK people order the Tonkotsu ramen here. That is actually more of a Kyushu or Yokohama ramen style, but here its suppose to be Hokkaido ramen. So if you ask for my recommendation, you have to try the Shio and Miso based ramens instead to judge correctly.
I don't really think Tonkotsu pork based soup works that well with the Hokkaido noodles they use here - Kyushu style ramen noddles are completely different, more like Northern Chinese ramens.
You can really detect that the Chefs/Owners here have tried to make the noodles as close to 'perfection' as possible, its in the broth, noodles, chashu and even the menu itself. Obviously. according to their own preferences. This type of adhesion to perfection is what Japanese people are famous for - and us Hong Kong people are missing. WE HAVE A LOT TO LEARN FROM THEM!

拉麵和湯底都很出色 =)
去到已經下午2點幾,, 侍應請我地盡快點食物,, 因為就快關門,, 我勸大家如果想試試的話就要早些來... 午餐的餐牌內大概十多款拉麵,, 定食有較多選擇,, 於是我便點了豬骨湯拉麵,,
離遠看見侍應拿過來的時間已經感到驚訝,, 因為係超大個碗,, 事實上,, 麵的而且確是很大碗,, 除了拉麵本身,, 還有很多其他配料,, 例如紫菜, 洋蔥, 粟米, 蔥等等. 還有數片叉燒,, 全部都很好味啊.. 我認為這都要由於湯底很好味,, 油不算很多,, 味道適中,, 絕對沒有過咸...再者,, 拉麵的質感也不錯,, 自己本身不太喜歡拉麵都認為這裡的拉麵實在值得一讚...而且拉麵只是$65, 又很大碗,, 絕對物超所值. 還有,, 店內的職員都很有禮貌啊!

不太合味道
牛油塩味拉麵配餃子
星期四的晚上店內半滿都冇,唔駛等,多好。好快就決定到食啲咩,怪獸要一個炸雞拉麵,我要餃子。湯底係自己揀的,有味噌、豬骨同埋塩(即鹽),怪獸要了豬骨而我就加左$10要牛油塩。食物都好快準備好,大大碗的拉麵大概五分鐘就來到。
第一樣留意的當然係個塊值$10,樣子超級吸引既牛油。第一次食北海道的拉麵(不計即食麵的話
餃子來的的時候只係暖暖地,應該都擺左一段時間...。我不覺得太油,但個餡好普通呢,肉冇咩鮮味。反而個皮不錯的,薄薄的但不失有點兒咬口,但煎得不香脆,可能係整定的關係。
一碗大大的拉麵,食得幾飽的,盛惠一百個大洋,值不值得,真的好見仁見智呢。

咁入到去一定係食拉麪啦
咁我就叫左日式餃子拉麪....d餃子中等大隻...有5隻..d皮唔太厚..餡料ok啦
不過今次碗拉麪既湯底咸左少少...對比上次食有d遜色
而我fd 就叫叉燒拉麪..d叉燒唔太厚同唔肥膩...得4塊湯底都係咸左d..仲有一樣就係..大家有機會去食既時候..記得唔好叫叉燒拉麪......因為碗麪既配料有海帶,芽菜,洋蔥, 荀, 同埋係叉燒呀<<<<<
個地方到有一到唔好就係冷氣唔夠...好焗食完成身汗

上等人食上等麵
係 Exchange Square 做生意, 價位果然 set 得高D, 不過, 以一個定食來計, 以份量來計. 又係幾豐富既.
我本來是想食拉麵的, 但等位時, 被路過身旁的一份漢堡扒吸引了. 於是, 叫了一個漢堡定食. 而同事就要了一份牛酒湯底拉麵, 加燒雞定食.
先說拉麵, 十足配料, 有叉燒, 有海帶芽菜, 麵好多, 份量果然勁, 俾咁既價錢, 幸好不是來碗碗大麵細既麵. 不然, 我們會好失望. 但同事那碗麵上面的一塊大牛油, 感覺好肥膩啊. 不過因為有牛油香, 而令到湯麵更加香口. 定食相伴著的炸雞, 點上沙律醬, 炸得好食而且仍舊保留豐富肉汁. Ichiban.
漢堡定食, 有湯, 有沙律, 有酸菜. 大大塊的漢堡扒, 加上日式燒汁, 用來送飯, 感覺不錯. 肉質鮮味的漢堡扒, 不用刀叉去切. 用筷子一夾就開.
定食味道不錯, 份量上亦可以說值回票價. 唔.......上等的麵食, 設在上等的地方. 啱既. 味覺沒有失望, 但荷包出血左少少.

不是味兒
豉油拉麵河底真的是豉油, 清而不咸但是不太特出, 义燒不太肥, 但本人一向不好日式义燒, 不懂欣賞. 麵底更是令人大失所望, 位於這個位置, 收這個價錢, 我絕不能接受如此一般水準的拉麵, 不香不彈牙, 七十多元真的太不值了..........
餃子太多油, 餡料不特出, 皮厚又不脆, 不吃也罷.......

濃味 and 濃味
似蕃薯波的燒墨魚丸
晚上時份較平日 lunch 少人, 但一樣要等, 幸好一陣就有位了.
螢烏賊沖漬, 一看好像得兩三件, 原來份量也不少. 味道偏鹹, 似乎有冰凍的 Sapporo
伴著會更好.
菇仔的塩味牛油拉麵, 牛油一大片, 正! 但他說沒有甚麼塩味, 他飲湯多過食麵, 最後食剩...
我的極上豉油拉麵. 材料很豐富, 湯少少杰, 感覺很濃味, 還是給吃慣濃味的食友吃了.~~ 下次來應該會再吃味噌或者塩味拉麵.
元貝只有一味靠大, 一碟都夠幾個人食, 味道一般般, 有點白灼感覺.
又有燒墨魚丸, 表皮看似有點像蕃薯波, 個皮有點韌.
另有伴拉麵的好朋友餃子, 一向對日式餃子不是如何評價好與不好, 這裡的大慨也是好吃的.
如果食一個 set 其實也不便宜, 已經要一百元.
雖然吃得不是太歡暢, 但一班人嘻嘻哈哈, 吃飽飽又轉場吃甜點也~~

終於等到位食啦
友人要了牛油拉麵 + 餃子套餐,友人都食唔晒呢,可見份量之多。
我要了餃子定食。
餃子好 juicy,美味,同埋份量都幾多,加埋碗飯,細食 d 都食唔晒呢。
個湯有幾多海帶,同埋味道亦不像出面的淡味。
只是拌菜的酸瓜 / 黃瓜味道怪怪的。
Orz,侍應們見到我地食完就即刻埋我地張單呢。
走的時候,依然見外面一堆人在等位

拉麵 - 回味無窮!
餃子 - 好油,不點不是損失
怕肥者不要點牛油,好油。
我倆都鐘意食重味,雖然是鹽味拉麵,但我們覺得味道適中。我未到過日本食日本拉麵,不能答你是否原汁原味。
味精?似有!
如果你lunch time去,好多人等位。你可以早十五分鐘(12:45),十五分鐘就夠,就不用久等,但都要等。否則要坐出面!

Nice Noodles!

聞名不如見面
姊姊吃特濃面豉湯拉麵、我吃豬骨湯拉麵,其實只係湯底唔同啫,各樣料都一樣。前者越食越咸,可能同極上醬油(類似頭抽)有關。後者….我覺得豬骨味唔算勁,可能喜歡淡味d的東西,硬係覺得方間的豬骨湯被咸味濃罩著。而從西山麵所來貨的麵條,較為硬身,要細嚼細嚼。拉麵第三樣重要的是那片义燒,我一向都唔食的,這裡的軟綿綿到不得了,食晒!
小食:薯仔年糕餅,十個好食!!雖然係年糕,但完全仍然食到,本身無乜味既薯仔!功夫值得一讚!!
p.s.光顧完,成身油煙味。

店子Menu
由mtr行去交易廣場,遠遠睇到今次既目標, 門口有幾個人等緊; 雖然店有戶外位,但係當日太凍,冇嘜人坐係出面,雖然好肚餓,但係我地都寧願等等,免得係外面一邊吹風一邊食。
店子出面, 係一個平台, 有個大噴水池, 間店好突出, 好易見。 裏面唔係好大, 聽到有d侍應跟日本客人講得一口流利既日文, 感覺有少少似入左日本既麵店
一坐低, 有個四眼哥哥仔畀左杯暖暖既麥茶我地飲, 好味又暖身 先睇睇menu, 無花巧既圖片, 都是以名字吸引閣下挑選...因為真係幾餓既關係, 點左"主角"拉面, 同一個小食。大K點左 味噌拉面 , 我小K就點左個 牛油味噌拉面 (本人偏愛有牛油既拉面), 而小食就點左名字頗新鮮既 炸年糕薯餅(事後後悔冇叫餃子)
大k - 咬落去口感好得意,未食過日本年糕,所以唔知係點,感覺普普通通,份量如果可以多d就好
總括黎講,店既主打菜 - 拉麵真係唔錯,服務都過得去,不過我地食完野傾緊計期間,發現有2隻"強哥"路過,呢到真係要扣分。價錢方面,價格比其他店高,拉麵既價錢都合理,不過小食好似唔值咁貴。
