The smoke salmon was of good quality, no doubt, matches well with lemon and the herb.
The savoury Swiss roll was not just some rolled up sandwich, it's not cakey either, but withy more moist to it, tho I couldn't figure the ingredients of the seafood mousse, as the flavour doesn't pop out much.

The DUCK TART, brought so much surprise, as the egg sandwich was too dull and plain without much fillings. The DUCK FOIE GRAS & MEAT was very well seasoned, that has a huge resemblance to one of the Chinese dishes. 
 LOVE IT N LOVE IT but I don't recommend to take it in one bite as it could be too salty.

Lemon jam on top was sharp and real sweet, bitterness of the zests balanced it out. The cream was airy and full of lemon sour. The cheese cake was divine, nomnomnom, saltiness of the cheese brings the piece up to another level. The ladyfingers layer was too thin to taste. Oh, and I love the short bread (pâte sablée) as the base, gives it a good crunch and a nutty flavour! Along with the yellow white chocolate, this cake has so many texture and taste going on. So fun and enchanting.
This is actually my overall favourite.

The lemon juice and flesh on the top has a big STING, that can be compensate nicely with the the cream below. Beneath that there are squares of the short breads & candied lemon, bittersweet. On the bottom, the Chantilly cream is super sour and buttery delicate, like improved version of lemon curd. (Kisses to the chef
 I'd say not to eat it layer by layer, but get a spoon full with everything. My emotions were heightened infinitely. Appreciate how different substances combine and compelte one and other. 
yet, the ingredient did include jelly (gelee) but not found. Or is it the lemon juice?(melted jelly?)
also small complaint, the glass was so sticky

This puff had the same filling as the above, the pastry and crumble was just so so, I'm not saying it's not nice but I mean it's getting boring. < different broth the same old medicine >

This was the item that arouse most of the anticipation, PH is too well known for its macarons, this just has to be good doesn't it? By looking at it, it's a pure eye candy, the captivating golden yellow surface, pro-made macaron crust, and the thick fulling filling.  Unfortunately, mine was kinda soggy, nothing like what I had from store. Maybe it's just bad luck, not all are like mine, um, so hope for better quality control

This sorbet brought us to the finale of the sweet sensation with: gelato-like sticky, no icy lumps, stingy sour, freezing cold sorbet. CHEERS

Throughout the tea set, we enjoyed it with this tea as recommended. It has good fragrance and strong floral after taste. It was more Chinese than expected, tho suitable with infinite lemon and sweetness.

To finite the citrus journey, it's time to have something milky after the tea set.
I was told the tea set does not include any chocolate items when made reservation and also read some reviews that their signature chocolate its a real deal.
And ... it was a wise decision.
 Made from 4 kinds of chocolate, cream, and vanilla(could see pods) Ice Chocolate without ice, and no extra charge for Ice version instead of hot.

題外話/補充資料: Honesty opinion made. Service was super attentive, pleasant environment with low voice level, had a lovely afternoon. Seated by the window, had a spectacular view of the harbour, it's unbeatable at high as the 103rd floor. Would love to try their Chocolate Afternoon Tea when I've strengthen my sweet-tooth.
