    Good friends gathering again when they really support whenever my choice for any kind of foods choosen from group-coupon, we make appointment 6 days before valid date is end of August.
     
    The conversation of the waiter really generous & polite, he is so kind to express detail instruct how to get there, which really a low-profile place to 2 of us except one of us regular travel here for purpose.
     
    there is 2 or 3 table being occupied around 6:30pm, which we suppose to stay till 7:45 as the coupon said;
     
    polite waitress is kindly to introduce the menu
     
    before she guide us to the spacious seat & welcome for photo time
     
    nevertheless, we choose a extra noodle when we got 2 coupon only,
    drinks come first when noodles snack follow within 5 minutes
     
    the supreme is under our expectation though say variety ingredients but look almost the same with the other we already get
     
    dumpling is good when the cover is between chewable texture with juicy ingredient too; while the chicken meat-ball is unusal texture we ate normallyshocked
     
    one of us love the texture of the egg, I love the pork & soup which is better than some famous noodle shop. but the ramen texture really disappointed me
     
    : which is too soft though the soup is hot & rich enough ! ( compare with the one I ate in Sapporo sad )
    so friends add dried garlic & sesame in order to rise the attraction
     
    during our chating time, we found the area quite hot when the back-door always move by customer for entrance, waitress say sorry when the air-con. have the limitation for adjustment, so we move to another place for dessert time around 8:00pm
     
    nuts-base soup with japanese-noodle should be a creative idea, but I think convenience place also important to customer too!

    Tried this place out today for lunch. The location is a bit out of the way. It is along TST East but would need to make a special detour from the covered walkway to enter the restaurant. It was weekday lunch, but I was shown a seat immediately and the place was less than half full. Obviously news hasn't spread yet about this place as the other ramen places (Ippudo, etc.) are always super crowded!

    Anyways on to the food. They have a number of lunch sets, which is a nice touch otherwise the prices would be on the high side for lunch. The price range from $53 for ramen with soft drink to $63 for ramen with appetizer (chicken ball, tori dango) with soft drink. Being a poor student I ordered the cheapest set mad

    I ordered the Marutama ramen (two options: spicy and non spicy), no need to order condiments as unlike Ippudo it comes with an egg.

    - Soup: Soup was hearty and not too oily, although chicken-based it tastes just as satisfying as the tonkotsu-based soups you find in other places

    - Noodles: The noodles here were a bit on the softer side. I like the more "al dente" bite to noodles and it would be nice if I could also choose the noodles texture / softness similar to Ippudo

    - Condiments: Came with spring onions and seaweed. Also on the table are fried shallots (garlic) which you can add as much as you want! I suggest you add them while the soup is still hot to soften the shallots. The table condiments also includes hot pepper and sesame seeds

    - Cha siew: This was very nicely done, tender and good distributions of the fatter and lean meat. Unfortunately there was only one slice

    - Egg: The egg was done very well, very well seasoned and with a runny yolk. Often the egg that comes with ramen in HK is not seasoned. This had obviously been marinated to give it a light dashi flavor. I like my eggs warm but this came cooled, similar to "onsen eggs" you can order at other restaurants

    Portion wise, the size was just nice for a girl like me but maybe on the small side for the guys. My friend was still not full although ordered the $63 option with appetizer! tongue

    The lunch set is great value as at dinner, the Marutama ramen alone (without drink) costs $75. I also looked at the a la carte menu, there seems limited options but there are a few side dishes offered, including stewed kakuni which I shall try at my next visit.

    Also needs to add 10% service charge to all of the above prices.

    Service was on the "raw" side (read: new restaurant) but the boss was around to look after things so went pretty smoothly.

    丸玉拉麵:
    九洲雞湯湯底配上自家製幼身拉麵.
    雞湯及瑭心蛋超美味しい!
    湯底沒有‘鳥華‘那般油膩。辣麵是荵辣而不是辣椒辣,挺特別。與雞湯配合得很好。

    赤拉麵:
    酸辣香草加上七種果仁的湯底。其實與小辣的冬陰功有些相似。雞丸子很淋,內有洋荵及小小辣椒。有特式。

    每種麵及配料份量不多,並不便宜。但可以$15加多一個拉麵餅 (替玉).

    服務及環境不錯。由於雞湯拉麵很好,會再試。smile

    We walked past this ramen shop many times but never really noticed it because the entrance leading to the shopping mall in which it was located looked like a car-park! But actually, we're glad we tried.

    First, about the interior, there were quite a lot of counter seats and those were quite comfortable. The nostalgic background music featured Hideaki Tokunaga 德永英明.

    The shop served 4 types of ramen:
    Menu in English and Japanese
    Menu in English and Japanese
     
    (1) Maru Tama (not spicy or spicy) - It's their signature ramen. It's chicken soup based with a piece of char siu and soft boiled egg. If you ordered the spicy version, there will be a lot more spicy spring onions inside.

    (2) Aka ramen - Ramen with chicken meatballs in a spicy and sour broth with some grounded nuts.

    (3) Tan Men - No description was available but looked liked the "Canton Men" you could find at Ippeian (mixed vegetables with sliced pork...i.e. a Chinese stir-fry).

    (4) Ebi Men - Shrimp ramen.

    We ordered Maru Tama (spicy) and the Aka ramen.

    I was initially quite surprised at the mild colour of the soup base and thought they gave me the wrong one. shocked But actually, the spiciness comes from the Japanese spring onions instead of from chilli. It was quite spicy actually and I liked it. The spicy spring onion taste mixed very well with the clear chicken broth. It's not oily at all (as opposed to Tori-Hana) but very tasty.

    The char siu was fine. Quite tender but just one piece which had a lot of fat on it. On the other hand, the tamago was really quite good. My wife tried it and she immediately thought it was "Cho Oishii" (Super deliciouslol )

    The Aka Ramen was also quite interesting. Essentially, it tasted like a much toned-downed Tung Yum Kung. The grounded nuts added were quite interesting. The chicken meatballs were quite good. It's slightly pink and very very tender. Each meatball was mixed with a bit of paprika/chilli and onions. This is a very interesting type of chicken meatball which I haven't seen in Hong Kong before. It's quite nice.

    Fried garlic slices and chilli/paprika mix (?). I don't suggest putting the garlic and/or chilli into the Chicken broth as it's already quite tasty.

    The only person who spoke Japanese was apparently the chef. Some Japanese customers were asking for directions after they had their Chicken ramen. It took awhile to deal with that. The staff were efficient but seemed a bit nervous. Anyway, the service was good.

    The noodle was the thin type and quite firm. We noticed that it was freshly made in the shop. We saw another staff making the noodle as we left the shop.

    The bowl of noodle was slightly on the high side since there was only one piece of char-siu and one egg. It was just about filling enough. I noticed that you could add another noodle cake for about $15, which is reasonable. Nevertheless, this is one ramen shop which I'd actually like to return as the chicken soup was really good.
    Worth a try.
