About this Restaurant
:Ippudo's founder-Shigemi Kawahara (crowned "Ramen King") started his noodle business over 20 years ago in a small, humble restaurant with only 10 seats in Fukuoka. Ippudo has expanded to Japan, New York, Seoul and Singpapore since 1985. The key ingredient is the slow-cooked pork bone soup, combined with the right amount of toppings. Best to try the BBQ Pork Bun, Gyoza and without questioning-the ramen.

    Thanks to Ippudo and the communications team for organizing this tasting.
     
    At this tasting, there were two new ramens, one from Tokushima and the other from Kitakata prefecture.

    In between the two different noodles, there was an appetizer to refresh our palates and after the tasting we got to try their desserts as well.
    Drinks from the menu were also provided.

    Sunshine splash:
     
    Chose this one because it wasn't fizzy, it looked nice on the menu with a pretty colour gradient that was orange on top gradually becoming red at the bottom.
    There was a red glacier cherry at the bottom which contributed to the red colour.
    As for the taste it was really nice, it was natural with pineapple and orange juice.
    The drink also tasted similar to the Virgin pussycat and the Virgin Pussy foot.

    Kitakata ramen:
     
    First of all we tried the Kitakata style ramen.
    Broth:
    The broth for this had pork bone, dried fish and seaweed.
    Noodles:
    Flat and curly ramen.
     
    Toppings:
    Chashu, soft boiled egg, menma and spring onions.

    My comments:
    As well as the broth, the type of noodle is also important in my opinion, and the flat curly ones here were really nice, they gradually softened and were good for slurping while being al dente.
    The texture was similar to tagliatelle.
    The broth was slightly too salty, but the taste was addictive because the strong seaweed flavour was enjoyable but the fish was not so prominent.
    Interestingly there was some dried squid taste in the soup which gave it that excitement that bouillabaisse gives you.
    It was good that they paired it with the white end of the spring onions because it was slightly spicy and balanced the fatty chashu.
    I do not really like fatty pork but the chashu fat layers literally melts in your mouth and the taste was pleasant.

    Chilled tomato in plum flavouring:
     
    It was a fairly big tomato sprinkled with herbs and black pepper drenched in plum flavouring.
    The tomato was firm and refreshing bursting with tomato and plum tangyness.

    Tokushima:
     
    Broth:
    Pork bone and chicken broth.
    Noodles:
    Straight medium thin noodles.
    Toppings:
    Pork slices, green spring onions, menma and raw egg.
    My comments:
    The pork slices were marinated with their special sauce so it was paired nicely with green spring onions which has a stronger taste than the white end of the spring onions.
     
    The broth was lovely and strong and the noodles were medium thin noodles, although I would prefer the ultra thin noodles because it can absorb more broth.
     
    After trying the noodles without mixing the egg, I mixed the egg to try it with the egg yolk.
    The egg was really fresh because when an egg is fresh the yolk and white separate easily.
    I popped the yolk on the spoon and just dipped the noodles into it and got this lovely creamy taste.

    Almond tofu with green tea:
     
    The green tea on top was quite watery but beneath that was almond pudding. the pudding was firm with a deliciously strong almond taste.

    Okinawa donut with icecream:
     
    These donuts are made in house at Ippudo, I felt they were dry and hard inside but when it is eaten with icecream the combination of the two were delicious.
    The appearance and style reminded me of the donuts at Tai Cheong bakery but with a hard centre.
    ★☆★☆★☆★☆★☆★☆★☆★☆★☆★☆★☆★I'll definitely be back for the Kitakata and thanks to Ippudo, I have now tried another different type of noodle that I like as well as the straight thin noodles.
    After finishing the broth you should see the Japanese words Arigatou at the bottom.

    Ippudo Tsim Sha Tsui has a new style Ramen: 魚介 x 豬骨醬油拉麵. (Fish Soup x Pork Soup Ramen)

    The difference between the normal Fish x Pork Bone versions served at some other places? The usual suspects use a Pork Bone base soup and then add in Dried Fish Powders. The version here is deliberately a LIGHTER VERSION, a current Tokyo trend - and it mixes a Fish Soup with Pork Bone. A W-Soup.
     
     
    Fish Broth x Pork Broth Ramen -
    The soup was surprisingly sweet and light, with very obvious boiled fish stock flavour. The broiled Chasyu was thick and tasty. The ramen Noodles are super smooth and elastic, deliberately made to suit this softer broth. Overall - this was definitely a very mild あっさり (淡麗) ramen. 是東京最近的傾向

    Friends joked that this non-heavy ramen is suited to female customers. lol It was quite enjoyable but if you prefer heavier and thicker in-your-face ramens, I suggest you order the AKAMARU SHINAJI or KASANE style versions.

    Eggs -
    Eggs are always cooked well here. The egg flavour might not be the strongest but after tasting so many ramen shops lately I actually think this was not exceptional but was definitely above average.

    This was a little too solid for me but it had good almond essence. I still prefer it to come with some fruits than a green tea sauce!

    Cold Marinated Tomato -
    The tomato was first peeled and then soaked with Ume solution (Young Apricot) to give it more fragrant flavour. Quite appertizing. ~ 7/10

    Omelette Roll with Avocado and Sliced Pork Char Siu, with Cucumber and Leeks & Spicy Miso Sauce -
    This was promising but I think the char siu was a little too cold which made it a little weak in flavour. The egg omelette crepe was interesting indeed. Overall, this was decent except for the coldish pork. ~ 6.5/10

    蓮根チャーシューつくねはさみ揚げ - Fried Lotus Root Sandwich with Char Siu
    Lotus root sheets sandwiching minced char siu and yamaimo, a type of vegetable with a crunch. I liked this and at $48 it's a bargain. ~ 8/10

    Spicy Shrimp Mayo -
    This was very nice actually. The prawn head and prawn meat had abundant prawns taste, the chili mayo sat beneath the prawn to ensure it stays crisp. Very exotic and at only $65 a bargain for 4 prawns and 2 prawn heads. ~ 9/10

    Grilled Beef Ribs -
    Slow cooked until fork tender and mixed with Orange marmalade and Sichimi spice. This was generally pleasing, but probably needed more thickish sauce coating? ~ 6.5/10

    中華そば - 博多醤油拉麵
    The Japanese Chef himself kept referring to this new ramen as Chuka Soba 中華そば, and this is obviously Tokyo style ramen and partially Chinese influenced. You can actually find this in Fukuoka city (Hakata is an area within Fukuoka), the origin of Ippudo - basically the rule is that anywhere with a China Town will you see a 中華そば. Made with Soy Sauce, a bit of Fish powder, more Chicken than Pork Bones and made into a clear soup, etc. The ramen can be chosen between a Curly Thin noodle or a Medium Straight noodle. Recommended: Curly thin noodles ordered super-hard. This is the original intention of Ippudo even though it is not the most traditional 中華そば version. ~ 7.5/10

    Almond Tofu with Green Tea Sauce -
    $28 is a good price. This had a very strong almond taste and is quite gelatinous like but smooth, it is so Japanese. The Green Tea sauce was interesting. Some didn't think it worked as a combo. I think this was exploratory but I prefer fresh fruits with my Almond Pudding too usually.. ~ 7/10

    サーたーアンダギーアイス添え - Okinawan Donuts with Ice Cream
    I have had this before, it is quite a good end to a meal. ~ 8/10

    The Japanese Chef mentioned that in Hong Kong, many customers expect ramen to be served with a tonkotsu and strongish broth base.

    He introduced this original Hakata Ippudo recipe to Hong Kong just to show that ramen or Chuka soba can also be made with a clear soup with soy sauce, and hoped that we will also enjoy this alternative style. I can't agree more! Eating Japanese ramen is all about being open-minded and having fun! When are we getting our dose of Mapo-Tofu ramen or Sanma Ramen ? Or Oyster or Horumon ramen as is found in Hokkaido? Amongst many other alternatives, such as Ice Cream Ramen and Coffee Ramen, Blue Algae ramen, Whale Ramen, Horse Ramen, Shrimp Ramen, etc. These can all be found in Japan, only because people there are receptive to new ideas and don't judge food using their myopic subjective minds.

    Truffle Aroma 中華冷麵 -
    The noodles sit in a bonito influenced vinegary sauce, with a small hint of truffle oil.
    - I liked the very chewy thick noodles a lot
    - Think it could have slightly more truffle
    - Onsen egg was good!

    Lasagna Gyoza -
    This was interesting. The sauce is like a pomodoro sauce and quite sour. On top is baked with gratinated cheese.
    - This is more interesting than really tasty.. worth a try as it's gimmicky.

    - This was quite nice actually, has a fiery kick, a bit of pork mince and seemingly small pieces of soba.

    Kasane Ramen with Chicken and Pork Soup -
    THIS IS GOOD!!
    - This surprised us on the night, because we came for the above cold truffle ramen. But this actually tasted better. The broth had a nice chicken-y aroma and had a balanced taste between the Pork Bone and Chicken oil.... Tasted way more balanced than the Tori-hana 鳥華 version.

    Looked very well cooked. We found the eggs at other Ippudo outlets to taste better though. Hope it is just a once off!

    Last Thursday, I had the chance to visit Hakata Ippudo - one of the world's most famous ramen chain stores - here in Hong Kong (Causeway Bay). Having heard so many people rave about this restaurant and how they waited for over an hour just to get a table, I was curious to see what the hype was all about.
     
    Luckily by the time I went, around 9pm, dinner service was coming to a close - there was no waiting, meaning I was seated immediately. A huge relief, especially after hearing all those horror stories of endless waiting!
     
    To my surprise, the interior and decor was not as crammed as I thought. Coming here, I had the impression that it would be one of those ramen stores situated at the back of a Japanese alley with only 5-6 seats (if you've been to Japan, you know what I mean!). The interior was actually very spacious: table of different sizes in different corners of the restaurant. Moreover, the tables weren't so awkwardly close that your elbows were touching with the person next to you (which is a real luxury when it comes to packed-to-the-brim fast food stores!). Overall, a very pleasant and comfortable atmosphere.
     
    In terms of the menu, I thought that it had a good selection of main courses and side dishes. Main courses wise, there were 6 different types of ramen, as well as a cold selection. I personally thought that prices were quite reasonable (starting at HK$55 / US$7 / £4.5 / €5.7). While ramen has never been cheap, I think that given its location in Causeway Bay and the whole surrounding, I was willing to pay around $50-60 per bowl.
     
    I decided to go for the Ippudo Tonkotsu ramen. Within 10 minutes of ordering, my food had arrived. The soup base was rich and packed with flavour, while the pork was lean and tender. I felt that the balance was perfect because too often I find that soup bases are not thick enough, causing it to lack flavour. So because the soup base was so rich, I could taste its flavour throughout the noodles and pork. However, my only criticism is that it didn't have enough pork. By the time I had finished the two slices, there was still lots of noodles left to eat!

    Prior to ordering, the waitress had also asked whether I preferred my noodles soft or hard. I asked for my noodles to be softer and when it arrived, it was indeed soft - but not to the point it didn't have a bite to it.
     
    I also brought along my mother, who ordered the Miso Tonkotsu ramen. She personally thought that the soup base was too rich and that the sesame oil/soya sauce was too overpowering for her taste. The portion was also slightly too small for her. I agree that the portion is not the biggest; so while it may be sufficient for a quick lunch, it would be best to order some side dishes to compliment your main course when it comes to dinner. However, she did enjoy the noodles as it had the right chewiness.
     
    Overall, I had a very positive experience. While I certainly had high expectations for this restaurant, there is still room for improvement but it didn't disappoint. I would definitely revisit and recommend to others.

    After cutting my hair at Harbour City, I was wondering around for lunch, and remembered there was this ramen I wanted to try for a while, at 1:50pm, I was seated inside without any waiting. shocked

    And it was getting quite empty after lunch time.
     
    白丸元味 – medium softness for the noodles, I personally like this kind of thin noodles more than those one like “doll noodles”, the soup is very porky and I found it acceptable on the salty level. I must say, it was few of the good noodles I came across with in Hong Kong.
    2 slices of pork are soft, half fatty, but a bit of porky smell

    溫泉蛋 – just the right texture inside the egg, can taste the egg flavour, very creamy

    明太子雞翼 – 2 pieces, very crispy on the skin, the fish egg is a bit spicy inside the wing, not bad with the price of $32
     
    Service is pretty good, waiter/waitress are patient with questions.

    Fast service - my order was served after few minutes.

    Will definitely visit again in Central branch when I have time.

    been hearing news about how good this place is and how many people line up, so decided to try with friends.
    waited for about 45 minutes. had quite high expectations.. unfortunately, EXTREMELY DISAPPOINTED.
    would never come again because it's just simply NOT good. total waste of time and money. and one bowl of noodles isn't even filling at all.. i'd rather to go Butao or Daruma.. at least i actually feel very full from having their noodles, not to mention it actually tastes good. i can get much better quality and quantity elsewhere.

    First of all, I think it's probably unfair to try and compare the ramen in Hong Kong to the ramen in Japan so take the review with a grain of salt.

    I think the ramen here is not bad, obviously better than the regular chains but I don't think it's worth the tremendous wait. I thought the ramen was okay, not my favorite kind of ramen but good if you like the yellow thinner noodles.

    The soup was kind of msg-y so although it was good, it left you that "my throat feels like it's the Sahara" feeling.

    Overall, pretty good fix if you're hankering for ramen but I wouldn't wait 45 minutes for it.

    I was excited to try Ippudo after all the hype; I was even more excited once I started looking at the menu; and I was even MORE excited when I got my food!

    I've tried the ippudo in NY, and the one here is even better I think and reminds me even more of the types of ramen I like in Japan. Broth is creamy and flavorful; noodles can be customized (I like it extra hard, just like ichiran in japan). Remember to order an extra serving of noodles for the leftover broth. Get a spring egg topping if your ramen doesn't come with an egg - delicious! The chashuu buns are amazing - very fresh, soft and tasty.

    The line looked long, but I was dining alone so got a counter seat right away at 8PM on a weekday.

    Ever since Ippudo opened I have always wanted to try it because I like the thin Hakata style noodles.

    I tried to go to the CWB branch but it was packed, there is not much waiting space outside.
    The waiting space is just the lobby area when you come out from the elevators.
    The reservation/registration system at CWB is slightly different, you can use their touchscreen system to enter the number of people and get notified via mobile.

    Anyway, with the new crowd at Butao in CWB and Ippudo, I decided to go to the TST branch.
    I went just before dinner so I did not have to queue.

    Similar to Hide-Chan there were more items on offer and drinks too, however there are service charges as well.
    I wanted to try the Wasabi Tonkatsu but this was only available at CWB according to their FB page.
    After browsing the menu, I realised that some were Hakata noodles and some were the thicker type noodles.
    I also wanted to try the Deep-fried Squid Tentacles with Seaweed Flavour but I only found out about it after I had dined there.
     
     
    In the end I chose the Akamaru Shinaji which I thought was not spicy according to its English description, however it turned out to be spicy.
    On top of that I ordered an egg as well.

    The noodles came quite fast, and the broth was thick like Hide-Chan.

    There were lots of viscous cloudy white bits floating in the broth which tasted like collagen.
     
    I was hoping for more spring onions because the previous reviews seemed to show there were lots in the bowl.
     
    Overall, I really liked it, the flavouring was stronger and better than Hide-chan, however Butao has this uniqueness about it which is moreish.

    I think with Ippudo, it was expected to be good, and it turned out to how I expected it to be, hence there was no surprise in it.
    The egg was slightly different to other Japanese eggs with a runny centre.
    It was literally an egg cooked just right, whereas the other eggs I have tried have a denser runny yoke.
    The yoke served here was extremely runny, so caution must be taken when eating it.

    Been wanting to try ippudo since its grand opening, but I have long been discouraged because of the ultra long queue. Finally, on a Sunday, I decided to go on my own at around 2:30pm to try my luck and avoid the long queue. Lots of people were waiting despite it was after the normal lunch-time rush; but my wait was luckily relatively short due to going 'single'.

    Ordered a glass of Asahi - served in a very, very chilled glass which was definitely a nice touch and peaked the 'Asahi' experience lol

    Carefully studied the menu and various reviews before and I had decided to order 赤丸 before I was seated. It was heavenly - served pipping hot, tasted just right (not too strong or too weak), superb ramen texture... and now now now, after a few sips of the soup and a few mouthful of the ramen, the super chilled Asahi.

    Having said that, I have to confess that I could see how some people may find the soup base slightly oily. There was a layer of oil with 'fat-like' jelly floating. For me, it was totally acceptable and the soup base was just so memorable; but that might not work for everyone.

    Of course, being an egg lover, I ordered the very good soft-boiled egg... again, totally up to and beyond expectations.

    Ippudo definitely deserves a visit!

    I am a big fan of Ippudo in Japan and so today went to eat Ramen at Tsim Sha Tsui. I found a few differences of Ramens between HK and Japan. First and biggest is that there are few condiments on the table. I expect there be at least hot bean sprout, takana, and garlic. However, there is only sesame on the table. Second, half-boiled egg is just half-boiled egg. I mean it should be the one that boiled inside a soup and a little bit salty. Finally, I feel short on the taste of its soup. As other Ramen restaurants in HK, such as Ajisen(味千), Ippudo obviously arranged its product to the place of HK. As a result, unfortunately, although there are a lot of commons between Ramens, you should not expect that you can enjoy Japan's Ippudo's taste at Tsim Sha Tsui.

    I went in the late afternoon to avoid the ridiculous queues found in the evening. Having finally got a seat and tasted their Ramen, I can honestly say that it tasted ... just like a bowl of Ramen.

    Not really sure what all the fuss is about really. I think other Ramen shops dotted around Hong Kong and other places in the world could offer the same dishes.

    Definitely worth a try, but unless I really, really want Ramen in TST and there isn't anything else to eat in the Silvercord tower, I think I'll give this place a miss from now on.

    it opens at 1130am but already lots of ppl queue up b4 opening!

    ordered 赤丸新味--> abit spicy but it tastes good, the soup base has not much MSG coz i dun feel thirsty and it's not sticky when compared with other places...also it's not oily~ by the way it added 木耳 & 蔥as well~ it has 2 slices of pork but a bit fatty, the noodles is quite gd, quite chewy, not too soft

    chicken wings--> too small, not enough haha, but it's freshly fried and there's lots of 明太子 inside, ~

    cha siu bao--> small portion as well, but it's fresh, it has some salad dressing and vegetable inside , the bread is soft~

    half heated egg--> well it's 流 心 but not hot enough, $8 is not worth~

    Late lunch.
    Very simple menu, only three kind of soup bases to choose. We choose a red bowl.
    First thing to taste is the soup before stir it. Very nice with a good taste of pork bone. Then, mix all ingredents and that red paste on top, taste much more complicate but then it start to taste too salty..sad
    Noodle was fine with good texture. Not so soft. The porkchop is excellent though.tongue Soft and juicy, taste absolutly right.
    More filling than it looks. Can't order other things.
    The atmosphere is fine but very noisy while all the staffs yelling their half Japanese half Cantonese whenever customers come and go. That's a bit annoying. It will be better if they only assign a few staffs to do that..
    I dun mind to go there again but I will not choose that restaurant if friends need a suggestion. Nothing much special and with that price, I expect something better.
    I think they are waiting for their license for selling alcohol coz there is the bar area that not open yet. Well, wait and see if they have some good things there..
