    Mist is probably one of the highest quality and most expensive ramen restaurant with consistency. Mist has a model décor, the combination of the dark wood tables and red leather chairs gave it a very cosy welcoming. More importantly, an open kitchen for diners to visualise the chefs’ cooking skills. The lunch service was running at full capacity and diners can feel the dining room is buzzing, full of energy. The service was great, the staffs were helpful and polite, and the food delivered at a good pace.

    The garden salad was a side order, which was included in the set lunch. The salad leaves were fresh, patted dried and crunchy. Top with seaweed and vinegar dressing. It was a welcoming start to the lunch.

    Dumplings
    The dumplings were another side order. The wrappers were smooth and spongy. The filling was a mix of sweet Japanese egg and pork, which was very innovative and different from the Chinese dumplings we usually eat. The dumplings were boiled and served with Japanese vinegar and sesame oil. This is some very high quality dumplings.

    Kamo Rahmen
    The ramen was just sensational. The broth is rich and delicate, full of flavour. Ingredients including chickens, apples and Japanese dried fish, yet without any MSG. The noodles have delicate texture, cooked to al dente. More importantly, the duck were smoked to perfection, tender and not too salty. And the egg was excellent, sweet and delicate; the egg yolk was half boiled, in between solid and liquid stage. What else can you ask for more in a bowl noodles!

    The cream is whisk to its peak, not too much icing sugar, slightly sweet. The bun is soft; it was a light dessert to go with tea or coffee.

    The menu does not have huge variety and the restaurant cooks good food from fresh ingredients, kept everything simple. More importantly, the noodles are freshly made, the soul of every bowl of noodles together with the broth, surely, just sensational.

    Booked a table for 2 for lunch on weekday. surprisingly, the place was only 1/2 full. yet the food was definitely worth eating.

    ordered appetisers -- dumplings and salad. You can't skip that. Nothing fantastic there. the dumplings were soaked in a kind of soy sauce. and salad is, well... salad. plain old vegetables --- raw

    the highlight of the meal was the ramen. I ordered the pork soup ramen (tonkotsu). apparently only available during the winter season.
    the soup was yummy, and noodles were nicely cooked with good texture. two slices of pork, which was tastefully braised.

    other peripheral niceties: the cutlery was neatly arranged in the drawer beneath the table. as you pull open the drawer, you'll be impressed with the neat set (or at least i was). very typical japanese to pay attention to such details. ichiban!

    spent HKD 369 for 2 pax.

    worth several repeat visits if this place is within your budget.

    I actually read about MIST when I was eating in Chabuton ramen shop in Japan. The ramen at Chabuton tasted great so I was really anticipating eating at MIST as good ramen shops are very rare in hk! Also bearing in mind that Chabuton and MIST have the same head chef so I guess quality is assured!

    However, it was kind of a disappointment after having a bowl of ramen at MIST. The ramen was good but not great – definitely not as good as Chabuton. In comparison, the soup base didn’t have as much intense flavour and lacked the mouth-watering factor.

    MIST’s glamorous and cozy environment without a doubt enhances the atmosphere into a high-end dining experience. Yet, this reflects on the majority of the bill.
    Lunch set for three people came close to $600 for us. The ramen was, again, good. Dessert was so-so while coffee was terrible!

    Overall, MIST is a nice cozy place to enjoy ramen. However, in terms of ramen, it is good but definitely not great.

    We went there on a Monday night as we wanted to try some "upscale" ramen. Firstly, let's get the one big negative out of the way - the ramen here is the most expensive ramen I have ever eaten. $100+ just for the ramen and then add extra for cha siu, egg and seaweed. The bill came out to $350 for two, no drinks other than tea, no salad, no desert. If you think of ramen as comfort food, then this is very expensive comfort food. In comparison ramen at chains like Akisen at like $50-$60 range. Similarly, a ramen shop in Tin Hau that I really, really like called Masyu Poon charges in the $60 range as well. As another point of reference, the ramen shop in LKF where the line ups are up to 2 hours charge like $85-$100 (have not been there, so the prices were just taken from a review in the SCMP). So however, you look at it the price is more than double my favourite ramen place an 50% more than the most popular in HK.

    OK, what do you get for the price? A really clean kitchen as everything can be seen from the bar seats. An exceedingly keen eye for detail - the chef wipes off spots of soup in the bowl for the perfect presentation. Very tasty soup - I got the miso which was tastier vs my partner's plum which was clearer and less oily. Two pieces of cha siu which is tenderly sliced from the roast. High quality eating utensils (even the disposable chopsticks are high quality - a Japanese host would never serve a guest with chopsticks that have to be desplintered. Great attentive service. Extremely pleasant seating environment.

    Basically what you are getting is the fine dining experience for comfort food, something that is not common in HK. Only the indiviual can comment if this is value for them. But for me, it was nice to get a different ramen experience than the norm that is there.

    Sometimes it is not the most important to taste impressive thing in a restaurant or cuisine, but the service N view.
    This is my second time for enjoying dinner in MIST, sat at the same place.....what was a bar table .
    In spite of narrow, we did enjoy the service and time there.

    As I remember, it can just contain 20-30 ppl, so it is not really noisy.
    Also, the MADE BY SELF noodles are still fantastic despite the soup of the RA_MEN is a bit salty......

    Bill is 3XX in total, although the main course like suraka pork is oily, I indeed like this cuisine so

    **MUST MAKE RESERVATIONS**
    MIST has been on my must-visit list for a long time. Today, upon M's suggestion, we spontaneously blundered to its doorstep and ended up waiting for more than half an hour for 2 seats. And in the end we managed to get 2 seats at the counter. smile I wanted to take a photo of the long line of diners waiting outside. There were one or two celebrities too, but I can't name them.

    So we gave them my number, and while we were waiting to be seated, we strolled along the Lee Garden block, found nothing we could afford, and headed back to MIST to check out their menu.
     
     
     
     
    After another 15 minutes it was finally our turn.

    Service:
    Excellent service. They behaved like personal butlers and were all smiles when I made a reservation at the door. They also pulled out the high chairs for us and helped us climb up. Professional. Quite unlike the kind of service you would expect at a Ramen restaurant. But then you have to admit MIST is no ordinary ramen restaurant. They charge exorbitantly high prices.

    Environment:
    Quite packed. You are shoulder-to-shoulder with the guy sitting next to you, but it's surprisingly quiet. M and I did not have to shout to each other, used moderate tones. The quietness is much appreciated. This is another aspect that distinguishes MIST from the other ramen booths. You feel as if you're in a high-class Ramen parlour, ha-ha. lol

    This sentiment is compounded by the delicate and well-designed table layout. At least where I sat, the metallic counter top was not laid out conventionally - instead, there was this delicate red velvet lined pull out drawer:
     
    containing everything i needed for the meal, complete with an explanatory sheet and a disposable disinfectant towel.
     
    From this info sheet you would learn that the soup base is made from 25 ingredients. Wow. shocked The chopsticks are splint-free and smooth.

    I am pleased with what I ordered. This is a bargain compared to the other items on the menu. (a regular bowl of ramen costs $100+)The portion is just right for me. The sprite itself filled me halfway up! -_- The green salad was delicious, with fresh, cold and crunchy greens with a light dressing. Dressing not too sour, suits my palate. Dumplings were average - but i liked the chives and edible garnish! Eat everything! I would've preferred more filling. It was a bit flat, the whole dumpling. Should be fatter.

    I ordered the Miso ramen. The noodles are made from a mixture of flours from Shishu, Tohoku and Hokkaido. Not sure what difference this makes but heck - it was yummy! The soup was strong the noodles soaked up the flavour. The soup is quite distinct. It's oilier than usual and the oiliness lines the inside of your mouth, in a pleasant kind of way. I didn't like the fatty pork that goes with every bowl of ramen though, because most of it was pure fat, and I had to remove those. What's left was minimal. A suggestion for improvement: lean bbq pork!

    The ingredients in the bowl are essentially identical but for the quantity and the soup base. This one was lighter, less oily, more soupy + watery. Not sure I could taste the plum though. Would i pay $140 for this? No! when there are much cheaper choices at $120 and $100.

    Don't know what to name this. It's not exactly a mousse - much too liquidy for that. The white layer on top is not cream, but milk. Frothy milk. This thing concluded the meal nicely - we though of going next door to the newly opened froyo parlour but decided this was enough. It didn't taste artificial at all.

    Conclusion:
    Despite its many, many merits, I must say that I won't be a regular patron. First, the queue. (of course you could book in advance but I'm sure many would have thought of that too..) Second, the price. Third....CWB is a bit too far for me. lol But for all of you who want to splurge and want some good ramen, MIST is worth the trip. Once in a while.

    My daughter and I ate two bowls of huge noodles. They were very yummy. We also ordered dumplings. We like the dumplings as there were not oily. Noodles are good too. I was most impressed by their service. When I complained that the soup was too oily, they replaced a new bowl for me with a smile. The lunch set came with coffee and dessert. My daughter loves the dessert and I like the coffee as it is surprisingly of good quality.

    The only doubt is that it feels like there is msg!!! Otherwise I'll highly recommend.

    I had high hopes before patronizing this restaurant because of the positive comments made by others. To make things short, here are the things I found unsatisfactory about this restaurant:

    1) My friend and I ordered the same lunch set (Ramen in soy sause base) + Dumplings.
    First, the dumplings are not fried. They taste like steamed or even boiled pasty. (I gave a C- for this crap).
    2) The soup is warm. I think the least they should do is to make the soup hot when served at the table. (C grade)
    3) The cha-shiu is okay, but definitely not "good". (another C)
    4) Finally, the noodles are like the Chinese "oil noodles". Well, some people may like this kind of noodles but we didn't enjoy them at all --> very sticky in texture. (D+)

    Some positive things though:
    1) The servers are polite.
    2) The environment is good, except a woman was talking so loudly next to our table. There's nothing to do with the restaurant but it certainly spoiled the lunch. That woman just couldn't keep her mouth shut.

    That's all. Go try if you have too much $ to spend. And I will never trust the openrice comments again, or maybe the people who tried gave good comments about this place had unique taste buds.

    Arriving at 10:30pm, thinking to have a light dinner..hehe..in turn, i am quite full tonight.
    I wanna come to MIST for a long time but i didn't ....My and I order one ramen each, his is 豉油拉麵 +叉燒 + 糖心蛋 and mine is 盬 味 拉麵 +叉燒 . 叉燒 is very smooth and tasty. For Japanese 叉燒, people usually put in the soup for few hours, then marinated for a day. The sifu in mint is capturing very good timing, taste is very good, not too salty and keep the taste of pork.3 big pieces per bowl which is quite good in size.
    豉油soup is a bit too strong for me and i only got one zip of my bf's soy sauce soup.
    My 盬 味 soup is lightly salted and tasted the soup with boiling long time with different ingredient. I think they must use pig head as pig head gives the best taste.
    糖心蛋is good because the egg yolk is just about done and not done, egg yolk taste good, should be egg from Japan...which is good taste, the egg albumen is lightly soaked with the sauce, not too salty..

    We ordered 櫻花木焗幸福麥豬, there are a lot of smoke flavor inside the pig. I personally like it, but people who doesn't like smoke may not like it. I think the wood give a bit smoke flavor, and they put a piece of thyme to bake together so that the pork absorbed the taste of thyme, which i think it is good. On the top, the chef baked mozzarella to create different taste. The mozzarella is not a strong flavor cheese and the cheese flavor was covered by black pepper sauce. I think the mozzarella was over cooked so that the texture is a bit hard. The combination is actually good.
    $120 per noodle is fine provided that the quality is good. If you are just paying $50 bucks less...and you will just tasting a very normal noodles as elsewhere.
    Worth to try and you will feel the difference.
    Service is good but waiter are not smart enough!

    I love ramen! Saw this place when we were walking past in cwb and decided to try it. Everything was as you would expect from a fancy Japanese restaurant, nice cutlery and presentation. We sat on the table quite near to the kitchen which I didn’t like coz of the noise and smell from the kitchen, they should really put a glass wall in between.

    We ordered ramen with egg and seasweed (a must to add!) and a salad.
    After ordering we opened the drawer at the table with our utensils and a description of the ramen. The description says their noodles would titillate your taste buds which immediate got me to thinking that the noodles would be just pretentious and not tasty.
    The salad was very fresh but nothing special. The ramen turned out quite good but factoring in the price I think other ramen places could “titillate” just as well tongue

    That being said service and atmosphere was nice, recommend to try but I probably won’t go again.

    It is a big surprise to have such authentic japanese ramen in Hong Kong. The soup (spicy onion) is so delicious, the spiciness is just right and it is a very satisfying meal!
    The soup used over 30 ingredients and the noodles is not like the normal ramen but the wheaty kind and also very elastic! super nice!
    The spicy soup + the special mist beer is a must-try combo.
    The beer is a white ale which is brewed in a microbrewery in Japan and specially made for this ramen shop! The beer is fruity and mild, very flavourful and perfect for spicy and flavourful food.

    I was first attracted by the hoarding pictured with a big question mark that I passed by every day. And I could not resist bringing frd to this new place.

    Japanese fine ramen = quite expensive. We sat along the bar table. It looked like a chic Japanese eatery in regard of decor and staff.

    We both had ramen. The bowl was well-presented. At first, both of us looked at one another ... the bowl was not big at the value of HKD100. Anywaz, we picked utensils from the drawer *gotta say that as they were really well-arranged*. The noodles was spongy in texture, and the pork was an unexpected big piece. The soup was of heavy flavour that I could still accept. While my friend claimed the poached egg was really good. Eventually, we were quite full. It was not easy to finish the whole thing.

    It was good overall. And it was eye-appealing to watch the chefs cooking mad

    I went there for lunch. It was really a very bad value proposition ! For HK$120, there was only a small bowl of ramen with 2 pcs of very thin roast pork ( not even half an egg for which you would have to pay an extra HK$10 !!! ), tea/coffee and a tiny portion of mousse-like dessert. The noodles were very far too soft, immersed in an oily soup. The portion was so small that it doesn't even fill a small lady like myself. The dessert tasted odd ! All in all, I definitely won't go back again ! I would prefer the Domon Ramen at Lee Theatre Plaza a lot more, much more chewy noodles at a much more affordable price !

    Ramen (or "rahmen") and Fine Dining never crossed my mind as two words that can be associated with each other in one sentence; now "MIST?" proved me wrong this evening. This new establishment in Causeway Bay put itself right amongst the fine dining scene in Hong Kong with its specialty: Ramen of course. Ramen to me is something hearty and down-to-earth, just like burgers which is soul food without costing a fortune. Perhaps my belief is already outdated?

    The decor was upscale indeed with leather bounded chairs (I assume they were leather) and utensils were hiding inside the drawer in front of each diners. A nice touch indeed.

    However, 2 things I noticed which I disliked very much: (1) the menu smells, literally of unpleasant leather smells odor and the staff admits it! & (2) with approx 26 seats including bar seats, there were 6 waitstaff around, always one nearby which was kind of intimidating for me. (even when their service was attentive and friendly)

    It is a very bold move indeed for it to offer only 5 variations of soup to go with a single type of Ramen (or "Rahmen") noodles. Each bowl came with only one single piece of pork and everything else is extra. There were some cold / hot side dishes but limited choices once again. We ordered the "Rahmen" Sushi to start with and it was lovely in term of presentation with 4 metal spoons holding sushi like pieces made of ramen noodles topped with different items. Honestly, not overly spectacular or extraordinary at all, the flavors + textures were very predictable in a sense.

    I ordered the ume shio "rahmen" (plum) with an extra boiled egg which looked very pretty. The noodles were relative thin and soft compared with those I tried before. According to the information leaflet provided, three types of flours were used to make this special noodles and over 25 ingredients for the soup as well. Personally I prefer the more chewy and thicker types of noodles. The soup on the other hand was wonderful with the right level of saltiness to it and hints of citrus flavor from the ume (plum). Two Thumbs up on the soup!!!

    The one and only piece of BBQ pork was semi-fatty in a delicious way and the boil egg was good with yolk flowing out.

    Likes:

    * Great soup base, not too salty, just the right amont.
    * (semi-dislike) very unique noodles but rather too soft and too thin for my liking
    * Attentive service

    Dislikes:

    * Rather costly for a bowl of hearty ramen.
    * Although service was great, too many waitstaff within the limited space, privacy was a concern in my case.

    Have always liked ramen though haven't been to my fav Sapporo for some time. Was the only patron in the restaurant at 2:15 pm other than a reporter here to do a write-up. On the recommendation of the waiter, ordered the soyu ramen and the half boiled egg.

    The soyu soup was very very good. Fragrant and tasty without being oily or too salty. Though not a big fan of soyu ramen in general, this was a good bowl of soup. Don't really remember the last time I have such good soyu. Finished every last drop of it.

    The half boiled egg was good too though the taste was not as "eggy" as I would like or have had at other places. I also would prefer it a little runny. What I didn't like was the fact that it came with the bowl of noodle and it was still cold in the middle!

    Overall, I think this was a very satisfying meal but difficult to compare with Sapporo as my fav over there is their tongotsu soup. Maybe I will come back and try the miso and see how the stronger tasting soup are. Definitely worth a revisit.
