話說食肆難做,入場容易守業難,日久見真章。麵圃年前開業,曾光顧兩次,當時覺得湯頭出色,材料有心思,印象良好,奈何要在地鐡站走一段路方能到達,久未再光顧!是日周日,在IFC看完電影,反又不介意長途前往,重溫舊夢。超級細小的店舖,裝潢十分有特色,懷舊麵店的風味,但卻舒適企理。入門左方是開放式做麵的廚房,右方是掛滿懷舊風味的裝飾,例如舊的電影海報及報紙,走過一條峽窄的巷子,方是用餐桌椅區。亦有復古式麵店吧枱位,適合單身客人。個人來說,非常欣賞這個擺放餐牌調味料的掛牆架的設計,疑似度身設計,剛好放上六款調味料,就是紙巾亦可掛上,省位得很,塑膠料子,青綠顏色,遠望似郵箱。兩款辣醬,左方用青辣椒做的,都幾辣;右方是豆鼓辣椒,記得去年是表明是余均益標誌的出品,懷舊風味十足,但現標誌失去,換了來源,嚐一嚐,香味真的有所不及,不只是崇尚名牌,醬油古方有其可取。下午茶餐有三款麵選擇,另加小吃或飲品,售價$50,周日也有供應,以現在外吃的市場價錢作比較,可算實惠。我選了天婦羅龍蝦湯薯粉,及話梅茄子;同伴點同樣的湯頭加素麵及溫泉蛋,小吃大家可以分吃。店員自動送上暖水兩杯,服務週到。天婦羅龍蝦湯薯粉天婦羅分開上,實在不分上不成,如果直接放在麵上,幾秒便已經腍了,變成慘不忍睹。天婦羅即點即炸,炸醬薄而脆,酥香熱辣,蝦肉鮮嫩,備以鮮檸檬及沙律醬,除客人意願添味,得分;可惜身軀瘦弱得可憐,有些小家,依稀記得,去年的大只得多!橙褐色的湯頭,看似濃郁,但味覺無期望的滿足,嚐一口,又在失分,似濃非濃之龍蝦湯味,湯頭中有蝦膏的口感,但味道有些搶,疑似加添了人做香味,並非百分百自然,跟店子剛開始時有別!湯頭內有粟米丶青菜及海帶。我的薯粉不俗,晶瑩煙靱不過腍。食伴的素麵亦十分掛汁,同樣即點即做,對辦。話梅茄子車厘茄子是一可塑性甚高的料子,以話梅醃之,茄子全身鹹酸入味,入口爆出之水份同樣醒胃,非常合我心意,我的必點小吃,一客有6粒。溏心蛋今時今日,溏心蛋大行其道,實無出錯之理,見賣相流心有光澤已知無失準,入口軟滑,隨即溶化,一客一只雞蛋分半,二人分吃剛好。$50計的水準,不過不失,但似乎大不如前!今天周日下午三時半踏進,並無其他客人,不知道其他日子生意如何?但難道淡了點,材料上省一點,才是營商之道。 continue reading

之前麵圃在短時間內成為中環的新貴,但不知為甚麼我一直都來有意慾前來。今天突然很想吃麵,那我便想起麵圃。溏心蛋我這個雞蛋痴又怎能不點溏心蛋呢。一看到這溏心蛋就知道對版,色澤光亮而且看到呈現溏心的蛋黃。當然光是看是沒有用的,一定要試下去才知道這個是否真正的溏心蛋。口感軟綿綿,帶有香濃的蛋香和微微的咸香,是一個美味而不折不扣的溏之蛋。即使把它吃掉,口裡還有溏心蛋的餘香。秘汁炒安格斯牛肉這道菜用了燒汁來炒的,這醬汁跟牛肉是一個很好的配搭。牛肉和洋蔥完全吸收了濃濃的燒汁味,惹味非常。牛肉有著香濃的牛肉味,而在牛肉加上香蔥和芝麻令這道小食的味道更上一層樓。酸菜香煎黑豚肉珍珠薯粉相對早前兩個小吃,這個麵卻令我有點失望。雖然湯底辣度適中,但沒有我期望的那麼濃,也不夠鮮。酸菜不夠酸,未能帶動我的食慾。而黑豚肉欠缺香濃的肉味,未能刺激我的味蕾。反而珍珠薯薯粉非常彈牙而有咬口,做得非常好。整體麵圃的食物屬中上,但如能改善不足之處,便能更上一層樓。 continue reading

聽咗呢間麵店好耐,終於有機會試試。午餐時段,唔係好多人,唔洗等,service親切,點咗推介嘅蕃茄牛肋條湯白素麵,牛肋條好tender, 番茄湯應冇加雞粉或味精,好淸,不過有啲酸,飲唔出有牛肉味。整體唔錯,價錢偏高,值唔值就見仁見智。下次再試過龍蝦湯。 continue reading
