叫左鴨飯,豬腩肉飯,味道唔錯,但是份量好少,男仔食起碼要叫兩份。中國茶幾十蚊一杯我認為應該大方啲比一壺茶你慢慢沖,老實講,翠亨村都係幾十蚊一位,但係人哋不斷沖水俾你,我認為除非真係好靚嘅中國茶,否則真係冇乜野資格收人幾十蚊一杯。服務好好,好親切,地方好乾淨,試吓無妨。佢哋嘅白飯朕認為係隔水蒸嘅,每粒飯晶瑩通透,口感相當不錯,肯定係用靚絲苗,系重點推介。 continue reading

星期日晚閒逛西貢,隨緣入了老香江茶居,裝修落過心思,希望食物一樣好。小店格局,家庭式招呼,可以舒舒服服食餐飯,不過菜式份量不多,如果行完山運動完要飽餐一頓的話便要叫多個白飯了。先叫了杯咖啡中,都知道中菜館的咖啡不會有驚喜,但見店內有很多咖啡器具便姑且一試,結果是淡而無味。第一道小菜樓梯骨,少少甜,配白飯吃很開胃,墊底的蘿蔔吸了甜豉油變得更好味,單是汁都可扒兩大碗飯。第二味是日本七味豆腐,坦白說我食唔出邊七味,像蒸魚豉油加蔥再放上豆腐的一道菜,但我很愛吃蒸魚,反而覺得不錯。最後是鵝汁油菜,一樣是汁好過餸的一道菜,菜很嫩。兩個人三個菜三百蚊埋單,剛剛飽。 continue reading

人有氣質之分,店舖、餐廳也亦然!氣氛憩靜,環境佈置幽雅,當您步入氣質不凡的餐廳,心靈也同時得到洗滌!經過四小時悶熱天氣下的行山活動,坐在接近兩層樓高度的天花下,看著天花的吊扇在旋轉,恰似走進 Lesile 的浪漫 MV 裡,嘴巴裡的清水也份外有格調!餐牌的封面,令我想起某香港老牌的花露水!侍應:「小姐,要哪款茶?」小姐:「我是絕頂大頭蝦,與凍頂烏龍茶是絕配!」雖然對茶一竅不通,但熱茶裡蘊釀出來的芬芳香氣、濃而不澀的甘醇味道,卻換來一份少接觸的賞心!除了不同款式的中國茶,「老香江茶居」還有咖啡和酒品的選擇。我喜歡蔬菜,餐牌上的原汁九菇扒菠菜正合我心意!菠菜青綠畢挺,保持爽脆而不油的口感,沒有多餘的水份,實以令我刮目相看。在恰好的質感之餘,還有著一份獨特的鑊氣,令我愛不惜口。當九種菇類集結在一起,效果是爽彈軟滑俱備,再由自然輕怡的蠔汁托出菇香,好吃得令嫁作人婦的九姑娘也偷食!至於九姑娘是何許人?想像空間是無窮無盡、無國界與無邊際的!鴨是「老香江茶居」的鎮店菜式,品嚐過後,方知不吃確實是一個損失!原隻大鴨,放置於法國鑄鐵鍋內,經四小時秘製純醬汁、不加入水份燘製,滙聚原汁原味骨鬆肉軟的鴨香與精華,不單令我陶醉不已,就連茶居阿伯也罷喝玉冰燒,聲稱要升級喝威士忌才算合襯,可惜行山怎會把威士忌帶上!原本欲嚐超濃魚湯海鮮大匯飯,我想大概在我倆用盡意志爬上那座雞公山的時候,這道看到其名字已叫人垂涎的魚湯飯,早告沽清了!老香江開埠以來,都是華洋集處、各地美食集中的地方,吸引的菜式多不勝數。老公於是選了正宗客家燜豬肉飯。滑溜飽滿的豬腩肉仿似閒逸地浮在醬汁內,醬汁不太甜,反而鹹味相對較重,更擁有一股獨特的香氣,總覺與咖啡豆的香氣很接近,無論如何也是伴飯的好拍檔。豬腩肥瘦相間,吸盡醬汁的美味,完全沒有肥膩之感,加入爽甜的紫椰菜同吃,美妙絕倫,味道與質感也令客家人豎起手指公讚好!「老香江茶居」菜式精功細作,假若穿起這件透明通花的旗袍,也如真金不怕紅爐火一樣,是經得起考驗的真章!「老香江茶居」雖不是提供懷舊菜式,可是從其菜式中,可體味到老香江的烹調的功架,使昔日香江的情懷,能於今天摩登地體現!香港這個小島隨著時代更替,經歷了無數的變遷,市容面貌、經濟體系,人與人之間的關係等,有著各種各樣的變化是在所難免。對於香港目前面臨的大小沖擊,唯有賴長久之來,香港最珍貴的核心價值之維繫。核心價值並不止於口術式的喊叫,而是緊緊地鎖在每一個香港人的心裡,然後發揮出來,不僅要將老香江細膩的菜色留下,更必要的是將香江一貫獨有的氣質與優勢保存! continue reading

剛剛過去的週末,相約了一段時間沒有碰面的心子茶聚,閒談間識飲識食的心子說起了一間在西貢的新派中菜館[老香江茶居],感覺蠻特別的,饞嘴如我聽得如痴如醉,反正兩個人晚上也沒有特別事情要辦,動心不如動身,立即出發往西貢吃晚飯去。餐廳位於宜春街,屬於西貢旺中帶靜的地段,大概於半年前光顧過對面的樓上咖啡室,已經對這條街道心生好感,可惜放眼望去原屬咖啡店的位置,感覺有點冷清,不知是否已經結業,真心可惜。。。[老香江茶居]以黑白色作主調,一步踏進門口,已經看見從天花伸展下來的大型層架,裡面放滿了很多不同種類的茶葉,儼如老式茶莊的模樣;另一邊的靠牆層架則擺滿了書,配合四周古色古香的環境,人就像置身於舒適的老式大宅一般,愜意的感覺油然而生。仔細閱讀過餐牌,兩個人也吃不了太多,於是點了心子推介的<懷舊香茜焗魚腸>,另外再點了一些肉和蔬菜,再加兩碗熱湯,已經差不多了。<古法濃鮮魚湯>一人份 $40坐下來也等了一段時間,湯品終於送上,奶白色的魚湯,一看便知對板,果然魚湯味道極濃,每一口都能嚐到濃郁的鮮甜味,是個稱心的開始。<懷舊香茜焗魚腸>$180喝完了湯,沒有等候多久,香噴噴的焗魚腸便送到面前,從外觀看十分吸引,為了有一個更完美的體驗,特意點了一碗白飯來配魚腸,面層的油條焗得超香脆,裡面的魚腸也吃得出是新鮮貨色,加了香茜一起焗,不用加胡椒粉也沒有吃到魚腥味,當然喜歡吃得更惹味的朋友,可以添加一點胡椒粉;唯一是裡面的水份稍嫌多了一些,假如焗得再乾身一點,效果應該會來得更完美。<清蒸蔥花茄子>$85原來以為菜式會逐一送到,怎料吃過焗魚腸後,又要等待一段時間,才出現了蒸茄子,驟眼看排列得十分工整的茄子,有一刻會懷疑是否已經熟透,但吃過一口後,是肯定全熟的;淋上了味道似蒸魚豉油的醬汁,配合茄子自身的清新味道,吃得每一口都是鮮香,茄子的質感亦沒有過份軟爛的狀態,輕軟中帶微微咬口,做得不錯。<原汁慢炆大鴨>例牌 $180在品嚐茄子的途中,炆大鴨送上來了,終於回復正常速度;擺盤有點吃西菜的感覺,品嚐味道以外也在視覺上滿足客人的要求;肉質十分鬆軟嫩滑,醬汁沒有一般坊間的濃濃南乳味,反而有點像瑞士雞翼汁,甜甜的汁香配合鴨肉自身的味道,是十分匹配的組合;還有放旁邊的魚肚,吸收了茨汁,同樣是一容錯過的美味。餐廳的路線有點以西菜方式處理中菜的做法,客人是否接受,要看個別人士的要求,但西貢一帶一向華洋共處,相信要找到合適的客路,應該不會困難,自己則覺得完全沒有問題,最重要是食物有質素與否,這裡的菜式完全達到要求,假如上菜的速度可以調教至正常一些,相信客人會感覺更加滿意。是次來到茶居卻沒有品茶,知道這裡有中式層架下午茶供應,下次有機會一定要來試試看,順道一併品嚐茶香。好味指數 8.4/10拍攝伙伴 : Fujifilm x-m1 continue reading
