I was rushing to a Sunday business lunch. Yes, on sunday - not good at all. I thought the lunch was at Mira Hotel. No, it was at the Miramar Shopping Mall. The good thing is I found this new shop in HK. This made my day.

Last year, I went to their HQ in N. Vancouver [Canada] several times last year and this year. It was found by a Vancouver couple. The founder Thomas Haas is an excellent chef who specialize in pastry. I tried the pastry and chocolate, and they are "out of this world" good. Their ingredients are so good & natural you should be able to taste while being not too sweet. This is not an easy task. Pls try to eat his chocolate slowly, and you will understand.

While i was rushing to lunch, i was extremely surprised to found this tiny shop. Thus, I bought several boxes of chocolate even though I was very late already.. I tried it last night nothing has changed. The best chocolate.

The bad news is they still don't have other goodies : coffee & pastry. I guess pastry will not be as fresh as flying to HK from Vancouver. In Vancouver, He prefers to sold out rather to overstock as his normal practice in Vancouver.

Well I did not mention or compare with any other brands available in HK. No need. Please taste this chocolate slowly if you can.

I did not have time for picture. But I give you their Website, check out the pastry. It's also "out of this world."

Recommended Dish(es):  dark chocolate . Hot chocolate powder. If they have any kind of pastry, try it.

Was highly anticipating this shop's opening and waited a few days for some first hand reviews - in the end I just decided to come try it out in person myself! madsmile Thomas Haas is a German-born chef who predominantly worked in America and Canada. Apparently quite a famous Master Pastry Chef and Chocolatier, Haas has worked in famous Michelin Star Restaurants (including NY's Daniel Boulud's) and previously won awards in Northern American competitions and other podium finishes.

I didn't write too much here, so try them yourselves to judge! smile- I guess I was quite taken aback that the chocolates here lies somewhere in between See's Candies and French Creations, despite its linkage to Valrhona. The final products are kinda Americanised in a way, a bit 'bolder', a bit 'sweeter', a bit 'thicker' in the crust, etc. Having said that, it also seems like Haas knows a lot about desserts, going by the exotic ingredients he infuses into the Artisanal chocolate pieces! smile

They also carry a signature Chocolate Sparkle which you can bake at home, its meant to be the world's only bakeable Truffle or similar - but I didn't try this and only attached the photo!

My biggest disappointment is of course, that this shop doesn't carry the actually Thomas Haas Desserts and Pastries as well!
