I know this will seem an unlikely proposition to many Hong Kong readers but the best ramen I've ever had is at Ramen Tatsuya in Austin, Texas. I'm from Dallas and this restaurant has even single handedly been the reason for me to make the 4 hour drive (one way). Since I'm in Asia I figured I should be able to beat the Austin favorite. I can't say that No. 1 beats them but its certainly the best I've had anywhere else. The broth is rich and creamy, the eggs are lovely, soft and slowly enrich the soup as you eat. The roast pork has a delicious flavor and is tender enough (though I wish the slices could be a bit thicker and even more tender). I'll continue my search for winning Japanese noodles in Hong Kong but, for now, No.1 is number one!
