對上一個有關於譚臣道"華南"之食評,已經是四年多前之事情,証明有四年幾時間,沒有來過此間受到一眾的士佬愛戴的食店.
鹵水牛雜不要河,要撈粗,撈麵才能完全吸收鹵水精華.再加碟芥蘭,只要腩汁,不要蠔油.
牛雜撈粗有基本的牛腸,牛膀,牛肺,牛肚等等.用料足,質素亦佳,牛腸肥美帶甘香,牛肺爽中帶稔,牛膀軟稔入味,牛肚爽口,其鹵水味道濃厚,經過多年的浸淫,才能鹵出一副好牛雜.麵條沒有鹼味,撈上鹵水當然好吃.另外上的湯味道也清甜.
芥蘭爽而不苦.腩汁味濃,但沒有蠔油般過強個性,如果用蠔油就只是一味蠔油,而不能感受到蔬菜的甜了.
牆上的剪報,依舊是當年過氣多時跳舞歌星 - 張立基之推介,想起當年,也是看到此報導才會來,真的要對著牆上的剪報,說一聲: (唔該你啦張立基.)
