Stir Fried Japanese Bitter Melon and Tofu

Bitter Melon is best to be served during the summer. If you cooked it properly, it tastes bitter-sweet and lingering. Time to intake more Vitamin C in this summer!
Ingredient and Portion
200g Bitter Melon
2 Bricks of Tofu
10 Tofu Puffs
Bit of Okaka Flakes
Seasoning
Bit of Salt
1 Teaspoon Sugar
Bit of Soy Sauce
Method
1.Slice bitter melon and add salt (to remove the bitter taste). Rinse the melon when it became soft and dry it afterward.
2.Slice the dried tofu into mouthful size, slightly fry the surface, set aside.
3.Fry bitter melon, and add tofu and tofu puffs. Pour egg and stir rapidly and add salt, sugar and soy sauce for seasoning.
4.Put Okaka flakes on top. Ready to serve.
Tips
Bitter melon skin is edible.
