日本人對於拉麵, 有著非常崇高的敬意。最初, 它只是由日本叉燒、荀、蔥花、醬油、麵條等簡單材料整作而成。但時至今日, 拉麵嘅口味越來越多樣化, 配菜和湯底亦層出不窮。自從「一蘭」和「豚王」陸續抵港後, 再無幫襯其他拉麵店了。原因是它們把拉麵推進到另一個層次。還有人可與之分庭抗禮嗎?今日就去試試同樣選址銅鑼灣的「魂」!賣相討好、材料十足。青龍湯底選用菠菜汁配上豚骨湯底製成, 味道甘甜不油膩。值得一試!把湯底一滴不留, 是日本人對製作者的一種敬意。 continue reading

銅鑼灣鵝頸橋底有間細細既拉麵店,門面裝潢日式風味好濃。青龍 ($99)食拉麵唔知點解對d綠色湯底有種情意結。今次既綠色係菠菜汁湯底,湯底杰身,但菠菜味真係略淡。配上半個半熟流心蛋,蛋既熟度拿捏得岩岩好。仲有肥美既叉燒,同少量既蟹肉同魚子醬,份量唔夠唔太食得出。拉麵麵質幾有咬口,唔會太糊身。整體拉麵麵質唔錯,但味道好淡口。太極 ($99) 黑色既湯底係墨魚汁配豚骨湯,湯底略為唔夠濃厚,豚肉味未為濃郁。係叉燒上面有蟹膏同金箔,蟹膏鮮甜濃郁。叉燒口感肥瘦適中。總括不過不失。 continue reading

前排去完日本已經好掛住個邊既拉面,日想夜想,搵左好耐最後決定黎試一試呢間都算幾出名既魂。黎到好好彩唔洗排隊。餐廳入面唔算大,坐位唔太多,但裝飾設計已經令我更掛住上次既日本之旅。總共有四款拉面。自己點左青龍,朋友就點左太極。麵質點左"硬",而醬油揀"中"。青龍拉面。湯底綠色,係秘制菠菜汁配豚肉湯,一黎到已經聞到淡淡既菠菜香。湯底濃郁但又唔會好漏,而且加左菠菜汁感覺好似健康點。叉燒無太乾身都幾嫩滑,唔會太肥。蟹柳出奇地好味,肉厚而且有小小蟹香。玉子(溏心蛋)都係水準之上,食完想再追加多舊。麵質選左硬,所以唔會稔而且幾彈牙。另一碗係朋友點既太極。湯底係墨魚汁配豚肉湯。墨魚汁聞落無好香,但飲左一啖就覺得好有墨魚香味。重點係叉燒上味放左蟹膏,令成碗拉面更新鮮而且帶點蟹膏香。另外追加左木耳,十分爽口。由於呢隻溏心蛋令我有食完再想食既衝動,但又唔想俾錢追加,毫不猶豫咁食埋朋友個隻。整體黎講兩碗拉面湯底出色,麵質配料都有水準。可惜係老闆話拉面店將會搬黎銅鑼灣到九龍區。估計係銅鑼灣區租金太貴,小店難以經營。不過搬鋪後一定會繼續支持。 continue reading

我與友人都好中意發掘香港地不同既拉麵舖,今次係鵝頸橋附近發現左 魂 ,清清地都幾好食,推介一下。魂 舖頭細細,不過都有四款拉麵,價錢都係公價,我地揀左太極同青龍。Menu有解釋湯底同材料,可以揀選麵嘅軟硬同湯底濃淡度,我就揀左硬同中,友人揀左雙中。青龍 $99菠菜汁加落豚骨湯做湯底,加上叉燒、玉子、蟹肉、魚子醬,非常特別。呢款拉麵係 魂 最特別嘅,每日六點後先有得食,每日限賣三十碗,所以要食到都唔係咁易。食落湯底真係幾濃菠菜味,會見到一粒粒嘅菠菜碎係入面,岀面幾難食到嘅一個味道。太極 $99墨魚汁加上豚骨湯底,一左一右,一黑一白,是為兩極。除左必有嘅叉燒玉子之外,仲有蟹膏同埋金箔。墨魚汁本身唔係一個非常濃味嘅醬汁,雖然我叫左濃味,湯底都唔會太濃清清地,有別於岀面濃到結身既豚骨湯。麵質係幼身款,掛湯一般,叫左硬都唔會太硬。有蟹膏嘅位置就會好味好多 叉燒半肥瘦都幾好食,入口未都即溶但係都溶到一半。食完同店主傾左陣計,原來銅鑼灣舖做到八月中,之後就會搬到太子,所有九月黎食嘅朋友就記得去太子舖啦! continue reading

第二次尼,今次食左火魂拉麵😋啲麵彈牙、硬度啱啱好,豬骨湯味濃郁,唔似出面啲味精湯整體碗麵唔會太咸,辣番茄味好開胃!流心玉子、叉燒都整得好好雖然價錢貴但係值得! continue reading
