This is Yan~* living in Yuen Long.I am a 為食媽, work in Mainland. I like to hang out in Tsim Sha Tsui, Yuen Long, Tsuen Wan. Italian, French, American, 甜品!! are my favorite cuisines. 霎眼看,每一家雞蛋仔做法也是差不多,倒上蛋漿後把雞蛋仔機模反過來等一回就完成,但因為製作時間,蛋漿材料有差別,用的蛋漿多少不一,雞蛋仔機模有不同大細,手法控制不一,出來的成品也就各有差異,也各有特色和風格。 在我心中,好雞蛋仔是要中間半實心半空心的,要的也是外脆內軟熱力迫人的版本,不會過火太膿,有脆邊位就好了。個人覺得北角雞蛋仔做的算不錯,成品大約一致,蛋香夠,只是有時會過火,也覺得硬了點。觀塘地...
