Dried osmanthus brightens your eyes and sugarcane moistens your lung and generates body fluid. Dessert with osmanthus and sugarcane juice is not new, however it is not easy to make a perfect one.
Ingredient and Portion
Rectangular Non-Stick Tray (18cm x 15cm)
200ml Fresh Sugarcane Juice
Bit of Rock Sugar (optional)
6 Tablespoons Water Chestnut Powder
1 Tablespoon Rice Flour
Bit of Vegetable Oil (to brush on tray)
Bit of Dried Osmanthus
Method
1.Heat sugarcane juice in a saucepan at low heat. Add rock sugar and cook until it dissolves (add more rock sugar according to your taste). Set aside.
2.Mix water chestnut powder and rice flour. Add to sugarcane juice. Sieve.
3.Brush the vegetable oil on plate with paper towel. Cover the tray with a thin layer of the mixed paste. Steam the paste for 2-3 minutes until it became solid. Take out and cool for few minutes. Roll, slice and spread dried osmanthus on it. Ready to serve.
Tips
1.Stir the paste evenly every time before you pour.
2.Portion of rock sugar depends on servings and preference. Sugarcane juice will be sweet.
3.Dried osmanthus can be steamed with the paste at the same time. But it may be hard to roll if too much was added.
