The sauce for this dish is an interesting mixture of several kinds of sauce. The result is very impressing indeed!

Ingredient and Portion
chicken 1 whole about 2kgs
ginger 3slices
scallions 3 stalks
chinese parsley 20 g
stock 1/2 cup
Seasoning
Marinade for chicken:
hot bean paste 3tbsp
sesame paste 1/2tbsp
shaoxing wine 2tbsp
dark soya sauce 1tbsp
sugar 1tbsp
sesame oil 1/4tsp
Method
Wash chicken and wipe dry. cut into smaller pieces.
Combine all ingredients for marinade and mix well. Mix well with chicken pieces as well as ginger and scallions. Let marinade for 30 minutes.
Heat oil in a clay pot, put chicken and parsley as well. Pour in stock, cover and bring to the boil. Then turn to low heat and simmer over low heat for 25-30 minutes until done and serve.

(一)揀雞要注意,毛翼有光澤,按胸骨覺軟而彈力,即為嫩雞。
