Sugared almonds are called dragées in France and confetti in Italy, where traditionally they were thrown about or handed out to celebrate carnivals, weddings, graduations and other festive occasions. The English adopted the custom but for the sweets substituted tiny pieces of colored paper—confetti. You don’t need a spinning copper kettle to make these delicious treats. They’re quick and easy and a great way to celebrate Valentine’s Day!
Ingredient and Portion
½ cup of water
1 cup of sugar
1 cup of almonds
Method
1. In a wok, heat the water and sugar together. Allow the sugar to melt.

2. Once the sugar has melted, add the almonds. Stir constantly. Allow the excess syrup to evaporate.

3. Once all the almonds are evenly coated with syrup, pour them onto a baking tray lined with wax paper.

4. Spread the almonds evenly on the tray, separating them so they won’t stick together.

5. Set the oven at 120° Fahrenheit(50° C) and insert the almonds for roasting.

6.Allow the almonds to roast for 30 minutes or until they are thoroughly dry.

7.Remove the tray from the oven and allow the almonds to cool.
