I've been wanting to come to Espuma after I've been bombarded with pictures of their waffles so I was pretty excited that I finally had the chance to visit. Latte ($36) - even though we came here at night, we just had to try their coffee so we ordered a latte. The latte looked the part with the nicely poured latte art but unfortunately it was a bit too hot which destroyed some of the delicate flavors.

Signature Fresh Fruit Tea ($52) - I loved the fresh fruit tea paired with Jasmine green tea though as the flavors were very well balanced as it was not too sweet and very soothing to drink.

Truffle Fries ($48) - the fries were gratifying to eat as they were very crispy while the aroma of the truffle was enticing and appetizing. You just can't go wrong with truffle and fries.

Mini Chicken Wings ($38) - the chickens wings were interesting (besides being halved) as at first, we were only able to taste the honey glaze flavor on top but slowly we detected something similar to fermented bean curd in the meat. We did ask them about it and they said that they use some kind of herbs from Spain to marinade the chickens. The flavors were a bit one dimensional as it was just sweet at the moment but if they can make it spicy for example, I think the chickens would be a great hit.

Jamon and Spinach Tortilla ($58) - the tortilla was pretty disappointing as the flavors were quite bland. It was almost as if someone forgot the seasoning and they told us that they made it like this on purpose as the ham can be quite salty. I guess that would make sense if there was a lot of ham in the tortilla but we hardly had any in ours. The tortilla was well made but it really needs more flavoring.

Spaghetti Carbonara ($68) - the sauce in the carbonara was too thin and runny which resulted in bland flavors again. The pasta was also just a bit past al dente so this is not a dish I would recommend.

Paella con Marisco ($98) - the paella has potential as the broth used to make the rice was actually quite flavorful but the rice was a bit too wet and the seafood could be better integrated.

¡Chébombón! ($52) - dessert time! I was really looking forward to trying their waffles and I was not disappointed. This is a mochi waffle with mixed fruits and vanilla macadamia nuts ice cream, and the texture of the waffle was perfect as it was crispy on the outside and slightly chewy on the inside. I've never had mochi waffles before and I loved the extra chewiness that the mochi lent to the waffles.

Ile Flottante with Hazelnut / Mr. Grey Likes Creme Brulee / Churros - we ended trying a few more desserts and they were all pretty impressive. The floating island dessert was very well made as it was soft and airy to eat while the flavors were delicate. The creme brulee had a strong earl grey flavor and the piece of sugar glass with coffee and chocolate bits was delightful as well. I love churros and the flavors were decent with cinnamon and chocolate sauce but the texture was a bit too hard and lean - would have been better if it had been more fluffy inside.

Verdict - the desserts were more impressive compared to the savories so this cafe would be perfect for afternoon tea and desserts!
