這一星期都在查看那裡有不羶的羊肉,發現很多食評都說馬家壯的羊肉一點也不羶。老實說,我不嗜羊肉的,只不過突然心血來潮想作一個大膽的嘗試。羊肉卷這羊肉卷的羊肉真的是一點羶也沒有,但卻沒有甚麼肉味,肉汁也不多。反而包著羊肉的薄餅做得很好,煎得乾身之餘一點也不油膩,香口酥脆。而整體味道未夠濃郁,建議加一點豆板醬有助提升羊肉卷的味道之餘,也能令羊肉卷更惹味。煎牛肉餃子餃子同樣煎得香脆而不油膩,但牛肉餡料欠缺肉汁和肉味。一個令我非常失望的餃子。牛脷粉皮雞絲粉皮吃得多,真的未有試過牛脷粉皮,所以我和朋友都決定一試。牛脷十分軟淋,不過帶點羶味。帶有羶味的東西都不是我杯茶。粉皮爽滑而能保持一定的煙韌度,真的不錯。而這牛脷粉皮的醬汁跟平時雞絲粉皮的醬汁很不一樣。我相信這個是用了一些麻油和牛脷醬汁制成的,少了平時雞絲粉皮醬汁的油膩感,還多了一點清新。豆沙窩餅窩餅做得薄身之餘,又煎得香脆不油膩。味道剛好,不會太甜。但豆沙餡料實在太少了,影響整個豆沙窩餅的味道。雖然馬家壯整體讚好的食評也不算少,但今次的食物令我們覺得這餐廳的食物只屬一般。 continue reading

We love Xinjiang food.  When we lived in China, it was a staple part of our diet.  In Hong Kong, we love to go to Islam Food in Kowloon City (seriously - it's amazing).  On this basis, we decided to try Ma's.  We left feeling a little cheated.The menu looks good and the classics are all there.  We ordered 'veal goulash' (this is what the beef buns are called at Islam Food, making me think that there is a bit of copying going on), lamb roll, beef xiaolongbao, brisket curry and green beans with beef.  The curry came first and it was OK.  It tasted more like a Japanese curry if anything, but definitely had a raw curry edge, rather than being very well rounded.  The beef was well cooked and it was an acceptable dish.Next came the beans.  They were ok, but a little shrimpy.  The veal goulash were not that great.  The bun was too doughy and thick and the meat was lost in them.  They weren't soupy enough inside and were basically sub par.The lamb roll was appalling.  It actually tasted like processed pork rather than lamb.  It had a bacon/smokey hotdog taste.  I am half Greek and grew up eating a lot of lamb.  This did not taste like lamb.  It was awful.The xiaolongbao were also pretty poor.  They didn't work at all.  Not enough soup inside and beef just doesn't work.  So, we will certainly NOT be visiting this place again.  If you want good Xinjiang food, go to Islam Food in Kowloon City.  It stands head and shoulders above Ma's. continue reading

來到二零一四年的尾段,還是出現這個自家辦的飯局,作為嗜羊者的我,就於十二月廿六日的Boxind Day夜晚,約了一眾食友,舉辦了這躺清真飯局,至於所選的地點,是位於尖沙咀H8的馬家莊,店家隸屬於九龍城清真牛肉館的分枝,根據它們的宗教信仰,自然沒找不著豬肉菜式,就連酒類也沒有供應,但就可接受自携酒,只需收每枝開瓶費三十元而已。正值假期當中,亦知道當天的食客應該不少,所以已預早訂了一圍檯數,也留訂了一些食物,說好約七時半準備入席,期間我的朋友早點到(約提早了十五分鐘),一切也屬人之常情,卻是臨時生起「變數」,老闆娘話由於人數未齊,所以配唔到檯,那有這麼不合理的事?! 總算朋友但都能準時到達,這張大檯還是坐了下來。此時店方又有要求,話要預先落好單,本人一時「心軟」,將所有想吃的東西,都一併點選落單,結果還是出了若干「意外」........最初上的有冷吃拼盤,屬於京式及滬式的混合風味,分別有金錢牛肚、五香牛腱、素鵝、燻魚,配以自家醃製的酸泡菜,用來配送酒類,算是開了一個不俗的勢頭,若以廿百餘元來說,價錢還是偏高了一點。再來個清燉羊湯,亦屬於店家的招牌作,取價一百數十餘元,奉以大碗上桌,面上分別找到幾件碎切的羊肉,與及芫荽數條;呻了一口湯身,確有來自羊肉的羶香,喝得出是貨真價實的貨色,期間亦於底部找到些許粉絲,印象理應不錯,卻是熱燙度有所不足,未免有所失色。吃完兩道之後,時間剛好接近八時,此時老闆娘問可否上菜,大家隨便一句沒有問題,此時問題來了.......本應屬於點心類的羊肉餃子,竟然排在第三道上菜,次序大亂之下,個人那刻的反應,確是有些「O 咀」的。幸好味道還是可以,叫了兩打之下,勝在皮薄而質感柔韌,至於肉裡的羊肉餡,亦是帶點羊味,就是未夠羊羶,整體只屬中上水準而已。預先訂好的風沙雞,說時遲那些快,已經端上桌前,作為廿百餘元的全雞來說,起初還以為會鋪上大量乾蔥金蒜,出來的味道及做法,倒類似於港式的炸子雞而已,倒是炸得皮脆肉嫩,也不需要甚麼醬料,不論剩吃還是送酒,大家口評還是偏向滿意。同場還有一個酥炸的大漠羊架,作為當晚的主菜,十二枝大大盤的,期間伴以芥茉伴吃,卻是當中水準好不穩定,有些人吃到皮脆肉嫩,有些倒吃著韌身的肉質,此時最重要的,還是叫老闆娘減漫出菜速度,可惜已是太遲了.........期間已經送上陳醋羊腩及羶然羊肉,兩者俱屬濕炒方式,勝在來得夠鑊氣,整體味道還是不過不失。差不多同一時間,這道咖喱羊腩,亦已經送正跟前,同桌還有十二件香脆的家常餅,平心而論,這裡的清新咖喱汁膽,還是稱得送香濃惹味,再配以炆得腍化的羊腩鮮薯,不愧為店內的招牌作,可惜舊菜未完,又來一道新菜,你叫大家怎樣消化得來?! 見到此番情況,已立時再向老闆娘叫停,可惜還是遲了半步,因為這條水煮貴魚,已出現於大家的視線範圍內,期間老闆娘在未曾詢問的情況下,己擅自「扒」開條魚.......撇開各項的失誤,這水煮魚的變種,味道確是不俗,其香辣的醬汁,可來得恰到好處,捨棄切片的魚塊,改為原條的桂花魚,吃著的魚肉也是鮮嫩,論排場也美觀得多,卻是當晚最大的問題,不在於「菜」,而是於「人」這方面。當晚最為不滿的地方,是我們正在努力「清理」這些菜式之中,那應該是排到最後的牛/羊餡餅,已經擺在眼前,本身已叫經兩番叫停,"點心部不同於廚房,叫停不到" 此刻真想有點衝動.........惟有叫人拿回廚房re-heat,到了正式進食之時,一點肉汁也沒有,作為其店的招牌菜,實在是不可原諒。期間有點不甘心,臨場點多兩個,這次倒好一點,但還是不太滿意,看來這裡的出品,與「本店」相比,還是相差一大截。來到尾段之時,店家呈上這碟奶油津白,吃的只是普通的津白菜,亦沒有葷料相伴,勝在煮得熟透,菜質於清甜之中,再伴上一個香濃的奶油芡汁,味道可類似乳酪的香氣,平心而論,這道菜蔬是不差的。同場再來多碟羊肉炒幼拉麵,是因應食友見到隔離桌之後,而臨時點選的,雖然其拉麵不是手拉,勝夠鑊氣足夠,配以濃味的羊肉炒之,出來的味道也沒多大挑剔。甜品分別有豆沙鍋餅,與及椰汁紫米露兩項,前者可煎得外層略帶焦脆,於軟熟的餅皮之中,再夾上香甜的豆沙餡,可弄得幾好食的,至於後者的紫米露,原本當晚也沒有糖水供應,經過請求之後,最後也煑了一鍋出來,味道還是稱得上合格有餘,不過此時有食友腸胃不適,要出入洗水間多次,也是有點遺憾的。來到結帳時刻,原來每人也只是三百元樓下,但當晚實在錯誤百出,加上掃興地方不少,期間向店方反映之餘,最後也扣減了些許開瓶費用,令到本只需二百八十五元而已,但價錢事少,來個賽後檢討,遇著大時大節,老闆娘驚我們霸住張檯,是可以理解的,但八時過後,餐廳已空出不少檯椅,基本上已沒有「爆棚」,未免太緊張了,最重要的,還是亦欠缺了應有的待客之道。個人在點菜方面,也不應該Show晒「底牌」出來,一時大意沒有「留手」,應該學食友話齋,分開三、四段出單為佳。經此一役,證明本人不是飯局攪手的材料,雖然對上上一次,還是有「些許進步」,下次遇上心儀的食肆,還是猶疑應否擔起攪手此職?!陵之微調:食物良平參半,服務不敢恭維評分(以10分為滿分):味道 6.5 環境 7.5 服務 5 衛生 7 價錢 8用餐於二零一四年十二月廿六日晚上  continue reading

尖沙咀餐廳多如天上繁星, 一天吃一家新的話, 恐怕幾年也吃不完。將範圍縮細, 在厚福街上已有不少餐廳, 街尾H8簡直是新店聚集地。樓上店鋪流轉大, 而前陣子, 這家老店在塘尾道口的清真小店開分店到這裡。可以一上到去看餐廳, 好生失望。午餐客飯將原本清真的菜單變成了京川滬! 天啊! 餐廳攪什麼鬼呀? 回鍋肉客飯? 魚香茄子客飯? 不就是豬嗎? 還來什麼清真呀? 難道佛堂內吃肉也可分葷席與素席嗎?為免破壞來意, 於是點了一個回味羊肉。心想, 餐廳還是好端端作一道羊肉菜好了! 結果薄薄的三件炸羊架!! 羊肉有羶味, 油多得可撈麵, 落個脆漿炸之, 真不如吃快餐店炸雞脾, 價錢還上百元! 不值! continue reading

很難才說服到不吃羊的同事去吃馬家莊,因為我說吃過深水埗的馬家莊,很喜歡蔥爆羊肉麵,同事一直以為清真館只有羊肉菜式,直到我們在店子樓下看到午餐單張才知有很多款式。蔥爆羊肉麵沒有午市套餐,所以點了最便宜的紅燒牛肉麵配豆漿,$38。最重要是湯底,這兒湯底未夠火喉,香料味道不重,所以十分平淡。同事點了最貴的口水雞套餐,$50。口水雞夠滑有啫喱凝脂,也有淡淡麻香,但不夠辣。和一街之隔的滿江紅口水雞比較,這兒味道比較港式,可能餐廳為尖沙咀上班的女士們而將菜式減辣減濃,不過就不太適合我們二人了。 continue reading
