Max Mak's Noodles is a relatively new name in the wonton noodle scene in Hong Kong. Dominated by familiar names such as Chee Kee (池記), Mak An Kee (麥奀記), Ho Hung Kee (何洪記), which all seem to be related in some way or another, it comes as no surprise that Mak Siu Kee is a joint founded by the child of the very same man that brought us Mak An Kee. I ordered the beef brisket noodles ($35). The noodles were traditionally made with duck eggs and lard (you don’t get that at a lot of places now!), and had a nice bite to it – it was springy yet not tough. The beef brisket was on the lean side though, as expected with a soup slowly brewed in a wonderful medley of spices, you can taste the dried tangerine peel and ginger. The broth was the highlight for me; it was a lovely blend of delicious meaty flavors without the oily residue you would expect from a beef broth, almost like a consommé, but laced with warm spices and darker. I ended up drinking the whole bowl of soup. On the side I had the deep fried wontons ($38/6pcs). They dumpling dough was light and crunchy and the filling was a traditional mixture of pork and shrimp, served with Thai sweet and sour sauce. 十一月十九日 (星期一)麥記,相信絕大部份香港人都去過不過,今次來的這家,絕不是一般的麥記麥氏雲吞,在香港可說是有着舉足輕重的地位最近,麥奀之子麥志明在中上環交界就開設了這一 家麥記店初開,人流還不多,不用等位店燈光通明,侍者也友善有禮,給人精神的感覺來這裡,那有不吃細蓉的道理? 一碗細蓉,真的十分細少,不夠吃麵條幼而韌,帶着一點鹼水味,但總算可以接受的咬落韌度十足,口感俗小巧的雲吞,置於湯底,從外觀看,金魚尾的賣相不算做得出色皮薄而滑溜,用了鮮蝦肉來作餡,爽口鮮甜另一碗,牛腩水餃河粉幼身的河粉,薄得可看穿,入口帶點黏也帶點韌,沒有黏在一起,屬優質的一款牛腩不可取,肉香是有,但質感頗韌而嚡口,始終,不是這裡的專長水餃倒不錯,餡料吃得出有蝦肉,豬肉,木耳和荀,口感層次豐富,味道也好 continue reading

早幾日同女王過左海去中旅社總行聽旅行既茶會全程都悶悶地,冷氣又凍茶會又無乜野好食,淨係飲左杯茶暖下身算搞左都個零鐘,餓餓地想話睇下附近有乜野好食諗住都係過返電車路果面先啦點知行過中保對面,見到開左間新麵店叫做「麥記」心諗似係麥氏一系既雲吞麵喎,唔知有乜關係?唔知見到先咁諗定點,好似本來都想上上面食雲吞麵凍凍地食個麵都好入到去坐低,見到原來係麥奀之子開既店間鋪幾光猛,簡簡潔潔幾乾淨咁,勝在夠新不過d冷氣都係凍左d講返正題,一入去叫左個細蓉先$29蚊話平唔平,不過計返佢地麥字頭,同埋附近d價黎講都唔算貴好似仲平過上面幾蚊女王叫左個牛腩雲吞撈d野食即叫即做,可能咁岩人少,都無整定先但係都好快上枱試下個麵,唔錯喎,幾彈牙d湯都好正,好香韮黃味(唔記得叫多韮黃...好彩都夠味)雲吞蝦爽,有地魚香,有麥奀水準試埋女王個撈麵,d腩幾入味,汁香濃,但掛住傾返去旅行d野放到d麵凍左,會有輕微皂水味,但湯麵/ 落返湯就無事整體黎講都幾好味,水準不遜於老爸,又平幾蚊服務都好好,食食下會拎紙巾比人反而麥奀除左總店之外,分店好似越做越麻麻地 continue reading

上星期,我走到中環機利文街的偉倫電腦買 USB ,離開時,見到對面有間雲吞麵店, 招牌仍是新速速的! 位置正是 NCB 附近,白色底綠色字的招牌,確實幾搶眼! 店名 <麥記雲吞麵> ,好奇一問才知,原來是麥奀之子麥志明開設雲吞麵店!店子環境光潔企理! 一般茶餐廳格局。主打傳統麵食!價錢由 $29 起! 不平宜!店員亦有禮!就算我問多兩問也不會嫌煩!上湯鴛鴦麵 $40即是水餃+雲吞麵! 這是傳統大小細細碗的!正宗做法是雲吞置碗底,上面是麵,好讓保持麵質爽身。 麵幼細如絲!入口爽身略帶嚼勁!卻有些微的鹼水味! 鮮蝦雲吞有3 粒,用鮮蝦做餡,大隻、爽身、鮮甜、無蝦腸。雲吞皮薄而滑,真好味!值得一讚!水餃有2 粒,其餡料比雲吞更為豐富!口感層次多變化! 包括:蝦、木耳、豬肉、冬菇絲、筍,感覺清新!蝦及豬肉可帶出鮮味!皮薄!水準又高! 只是略嫌有點鬆散!湯底清甜又少油!確實不錯! 美中不足有些少鹼水味!可保持麥奀記的水準,不過,價錢是貴一點! continue reading
