My wife and I learnt about this place from the magazine during our flight to Hong Kong. Based on the reviews and the restaurant rating, we decided to give it a try with high expectation. I know that Kau Kee is in all the tourist guides and places to go as evidenced by the long lines at peak hours, but it's still one of my favorites. Definitely a place I take visitors when they come to Hong Kong. My favorite thing to get is the beef brisket soup noodle with e-mein. The brisket is tender enough without being chewy. The anticipation had been building for days to try this place with the much vaunted reputation as the "BEST" beef brisket/Nau Lam noodle in HK for over 20 years. We came here on a quiet Thursday afternoon and found the place quite busy.  This was our first good sign.  The next good sign is that they basically do two dishes, with different options for noodles. Kau Kee is a really famous joint for beef brisket so expect long queues.
