Ippudo's founder-Shigemi Kawahara (crowned "Ramen King") started his noodle business over 20 years ago in a small, humble restaurant with only 10 seats in Fukuoka. Ippudo has expanded to Japan, New York, Seoul and Singpapore since 1985. The key ingredient is the slow-cooked pork bone soup, combined with the right amount of toppings. Best to try the BBQ Pork Bun, Gyoza and without questioning-the ramen.
