After hearing some good reviews about this restaurant, decided to pop in for lunch with a few friends. The interior primarily consists of a classic japanese wooden interior, with a majority of the floorspace dedicated to a large sushi counter. There is also a smaller room with a small sushi counter that seats maybe 5 people as well as 3 individual tables that seat 4. The spacing of the restaurant is very well designed. However, when I sat down on my table (the 4 seater), I noted that the table was still wet so had to notify the water to dry it. If i remember correctly, there are 6 sets to choose from (omakase, Hokkaido set, sushi set, deluxe sushi set...and 2 others). I opted for the Hokkaido set, which includes steamed egg, uni/salmon roe rice, 6 pieces of sushi and udon. The steamed egg was velvety and very smooth, with a small piece of mushroom inside, slightly seasoned for taste. However, the uni/salmon roe rice was relatively dissappointing as  the salmon roe was not very fresh and didn't have the briny flavor you usually get from other comparable restaurants. The uni itself was ok but I expected it to be a better grade as it wasn't as smooth. The sushi was the biggest dissappointment in terms of freshness, with one of the pieces emitting a very strong fishy smell, which I did not expect from such a reputable establishment. The udon was average although slightly overcooked. The meal in itself was $500, and at this price, I will probably visit other similar establishments in the Central area for better grade sushi...at least during lunchtime.  continue reading

今天,我懷著興奮的心情造訪佐瀨師傅!沿中環荷李活道斜路而上,我找對了。門外簡潔優雅,店旁有一排青竹搖曳著,牆壁上有一盞小燈,翻開那深藍色的門幡,進入店內。拉開趟門內進,長形的吧檯上,看到師傅們正忙著為食客準備食物。店內的右邊,正正是佐瀨師傅主理的廂房。在壽司店用膳,我喜愛選擇坐吧檯,既可一邊欣賞師傅握壽司的功架,而且壽司又可以逐件逐件的端上。午市定食有六款,價錢介乎 HKD380-HKD1480 不等,而我們選擇了Deluxe Sushi Set HKD500,壽司12貫。點餐過後,侍應為我們奉上濕毛巾,以清潔雙手之用。跟佐瀨師傅打聲招呼後,他就拿出一塊薑,用手掌輕壓,再以長刀輕劃幾下,不費吹灰之力,一片又一片的酸薑,端到我們的碟上。一般的壽司店,在吧檯上你會看到用來存放刺身的雪櫃,但是在這高級的壽司店,你不會看到這種情況出現,所有新鮮刺身,只會存放在冰墊的木盒內。侍應再為我們奉上較為厚身的濕紙巾,讓我們徒手享受壽司時,清潔手指用的,只有這樣,你才能感受到飯糰的溫暖度和黏度的細緻。師傅細心的詢問我們有什麼不吃後,這一餐的味蕾正式啟動!先端上茶碗蒸,這裏的茶碗蒸用了雞肉、冬菇和銀杏等去蒸製,勺一口熱度夠,蛋漿滑溜之餘帶蛋香,質感像荳腐花一樣,蒸煮時間掌控得宜,沒有過火。佐瀨師傅是時候表演其功架了!第一貫,昆布𩶘魚肉身爽但魚味較淡,為握壽司打頭陣,那最適合不過。輕掃一層薄薄醬油在魚身上,沒加任何調味,感覺清淡怡人。第二貫,蝦膏甜蝦當我們剛吃完𩶘魚時,佐瀨師傅開始握下一道壽司。呈半透明狀的甜蝦賣相已經吸引,再掃上一層墨綠色的蝦頭膏,入口既甘且鮮,爽腴甜美的肉質可見其新鮮!第三貫,針魚師傅在針魚上放上一撮細葱段,以去除多餘的魚腥味道。針魚魚身較薄,油份較少,味道清爽鮮嫩!第四貫,金目鯛肉質粉嫩呈粉紅,帶豐富油脂,入口爽滑有彈性,卻是另一種滋味!第五貫,北海道野生三文魚北海道盛產野生三文魚,在這裏,佐瀨師傅又豈會給你挪威的貨色呢?其肉質肥美柔軟,油脂、色澤和口感都有別於養殖貨色,以醬油漬過,顏色較深,魚味截然不同,脂香圓潤,配以醋飯,入口後的口感變化,更富油香,簡直不能言喻了!第六貫,深海池魚新鮮池魚肉質爽口,其紋理比較幼細,薄薄的醬油,油脂滿腔,味道更臻鮮美!這一刻,跟佐瀨師傅四目交投,我口裏一句"Oishii"~,他亦對我微笑的點頭致謝!接著,侍應端上味噌湯,這裏的味噌湯,湯色較深,湯內有昆布和少許葱花,味道不太鹹,味噌溫純,入口順喉,熱騰騰的,頓時給我暖胃之效!第七貫,三文魚子軍艦三文魚子渾圓飽滿,粒粒晶瑩剔透,那連環爆珠的口感,鮮味濃郁,鹹度剛好,有回甘之味,口感極為複雜!第八貫,醬油漬吞拿魚吞拿魚以自家製的醬油漬過,兩者沒有喧賓奪主,既帶出了醬油的鮮香,更令呑拿魚的鮮味更為突出。在佐瀨師傅的刀功下,不同的魚有著不同的切法。第九、十貫,拖羅和北海道海膽眼見拖羅魚肉上細緻的油花,一口吃下去時,魚肉的油脂和鮮美,在嘴裏慢慢溶化,滿口油脂甘香,一丁點筋也沒有,令我吃得不亦樂乎!這裏的海膽,是由北海道的海水包裝直送。一瓣瓣鮮橙色的海膽,整齊的排列著,質感豐腴軟滑,那水嫩鮮甜,不用解釋了吧!來到尾聲,就是穴子和玉子微烤過的穴子掃上了醬油,肉質緊緻,口感亦爽,味道相得益彰!玉子吃起來口感有點像蛋糕,質感鬆軟,幸好不至蛋糕的甜度!最後,侍應奉上稻庭湯烏冬。稻庭烏冬湯底較鮮,麵身扁平,雖稱不上彈牙口感,但質感幼滑,用來填飽肚子就最適合不過。總括而言,佐瀨師傅的上乘功藝,根本不容置疑!他專注的握著醋飯和食材,不但滿足了我視覺上的享受,而這十二貫壽司,更一一征服了我的味蕾。佐瀨師傅,後會有期! continue reading

近年真的越來越多東京開過来的壽司店,  繼先前米芝蓮一星Ginza Iwa, 還有一些香港人主理的壽司店如鮨森和樂壽司,  味道也是很不錯的!不知是否去吃美味壽司的頻率太高, 我對壽司的味道要求也越來越高了, 而每個人的味蕾和標凖也不太一樣。自從上次去完東京吃了美味無比的壽司後, 我對美味壽司的渴求簡直到了瘋狂的程度,每個月都要某人陪我去食去試新壽司店!來拜訪鮨佐瀬之前一週打電話特別預留了佐瀬先生的枱我們叫了500元的12件Deluxe Sushi Set, 食物內容有前菜蒸蛋和吃完壽司之後的麵鼓湯和烏冬先來蒸蛋,蛋味濃郁, 味鮮甜滑溜壽司的次序當然是由淡至濃, 每一件都輕輕掃上薄薄的一層醬油,以带出魚的鮮甜又不至於蓋過魚的鮮味, 雖然調味不至於太花巧, 但卻没有像坊間某些店用上柚子作調味, 或把壽司飯加入醬油以增加壽司入口的層次感和味道, 以個人來説,我會喜歡後兩者的調味方式多點!先來是甜蝦和魚,然後是深海池魚和三文魚,再下秋刀和左口魚海膽和魚籽鮮甜飽滿,海膽入囗即溶配上紫菜爽脆,味道一流!醬油醃過的吞拿魚咸鮮軟滑, 拖羅也很肥美, 入口即溶甜蛋略嫌質感鬆散, 蛋味還可以不會偏甜, 而鰻魚肉質沒有入囗即溶的感覺,有點失望,酱油調味也略重手了點,有點蓋過鰻魚的味道。麵鼓湯用了質量上乘的麵鼓, 口感比較濃郁有麵鼓香,但烏冬除了湯還可以之外,烏冬不是我喜歡的彈牙口感。 continue reading
