在眾拉麵強店林立的銅鑼灣能站得住腳, 一點也不容易。偏偏這間不用大排長龍的拉麵店卻靜靜地屹立著努力, 相信定有其可取之處。之前聽朋友談及這兒的湯頗咸。今次小人試了黑伝义燒拉麵, 並追加了荀和紫菜。麵未到, 店員先端上一杯凍茶, 解渴怡神, 更能清一清味蕾以享用跟著而來的食物, 很是細心。黑伝拉麵並非全碗都是黑漆漆的, 油份減了不少, 但仍保留到豚骨湯的味道, 咸淡適中, OK喎~~~硬麵稍微比預期中較腍; 幸而配料的木耳及芽菜增添爽口的感覺。肥瘦相間的义燒邊位燒得不錯。而荀和紫菜是分開上的, 可避免未吃已變腍了!感覺是一間還不錯的拉麵店, 可以一試!

自從豚王的出現,令拉麵市場重新走入正軌,不斷有名店引入,不同味道的湧現,的確令愛好者鼓舞。豚王進駐登龍街後,十分成功,並引來舞心的出現,無疑店內闊落及坐位舒服得多。今次不想再吃熱騰騰的搵麵,改了吃涼面,有著色彩繽紛的賣相,星形的秋葵、條狀的叉燒及紫菜、白色的山芋及溫泉蛋,麵條是曲形,加強了掛湯的能力,咬落又真的有嚼口及彈牙,在盛夏中吃一碗真涼快。

今次不想再吃熱騰騰的搵麵,改了吃涼面,有著色彩繽紛的賣相,星形的秋葵、條狀的叉燒及紫菜、白色的山芋及溫泉蛋,麵條是曲形,加強了掛湯的能力,咬落又真的有嚼口及彈牙,在盛夏中吃一碗真涼快。

走進這店時人數不多,在晚飯時間只有一半入座率。餐牌有三種口味拉麵選擇,加上另一新品,凍拉麵,及一些小食。最後揀了濃豬骨湯拉麵,再試下新品凍拉麵及枝豆。凍拉麵配料十足,有蛋絲,蟹子,紫菜,甜蝦等將所有麵條都遮住,碗底有少少汁讓客人攪拌一起吃,味道0k,好適合夏天。枝豆跟平時的無大差別,送上枱時有微溫, 上面酒上一點點鹽.到主角拉麵,湯底的確濃,再配上些拉麵可中和了太咸太油的感覺.可惜的溫泉蛋中間不太流心,又無甚麼味道,跟普通蛋差別不大.叉燒普普通通, 食後印象不大.

枝豆跟平時的無大差別,送上枱時有微溫, 上面酒上一點點鹽.
到主角拉麵,湯底的確濃,再配上些拉麵可中和了太咸太油的感覺.可惜的溫泉蛋中間不太流心,又無甚麼味道,跟普通蛋差別不大.叉燒普普通通, 食後印象不大.

繼續支持辣,所以我order咗赤,由於menu冇寫辣度,問問店員,佢話可選大、中、小辣。咁我揀大辣啦,麵要普通硬度。

At first we were going to try a different ramen shop, but because the line for that one was too long, this was the alternative ramen we had. Theres a choice of three ramen soups - I had the concentrated pork bone soup. The soup tasted right, not too salty or filled with MSG. However, I still didn't find it that special - loads of ramen places seem to be doing the same soup nowadays. I got seaweed to go with it as well, which I recommend since it soaked up the soup really well and still tasted really strong. 

The complementary drink was really weird. It tasted like tea and coffee mixed together. As a person who don't like coffee, I was really sensitive to the taste.

本來打算去豚王食拉麵, 點知七點幾已經賣晒於是去左對面的舞心拉麵完全唔需要等位舞心有三款拉麵: 白(豬骨),黑(濃味豬骨)及赤(辣味豬骨)我和友人點了白及黑, 兩款的麵條也要軟另加一客餃子好快就上菜白(豬骨)味道頗淡, 完全沒有豬骨的濃香味份量不算多, 但比一風堂的份量多少少男仔可能要追加黑(濃味豬骨)店員友善提醒其實只是白(豬骨)加黑蒜油可先喝白湯底試味再攪勻白湯底很淡, 即使攪勻後, 味道還是偏淡沒有豬骨的濃香味餃子(一客有五隻)算係三樣中最好味但可惜有點煎過火總括而言, 和魂, 一風堂及豚王比較, 舞心的質素排在後雖唔算難食, 但完全沒有驚喜, 而且湯底偏淡如果未試過, 不試也無防, 我和友人飯後亦一致認為唔會再光顧

My friend and I wanted a quick dinner in cwb so came to David Ramen to try it out. Since this place is right across from Butao, it's hard not to compare the two. We arrived around 8 and butao still had a long line waiting outside but David didn't so I would say David is a good choice for people that don't want to wait. I wasn't that hungry so we ordered the "special tonkatsu ramen" to share along with extra side of bean sprout and shredded fungus. The bowl of ramen isn't too big, I think it's a good one person size. The broth is a light cream color broth and then drizzled with black sauce on top of it. Also, in the middle theres a spoon size of thick red paste to mix into the soup. I first took a sip of the broth, and it's light yet very flavorful. But as I work through my ramen, the broth seemed to be a little bit too salty for my taste. The ramen came with one piece of BBQ pork, half soft flavored boiled egg, bean sprout, shredded fungus, and green onion. The BBQ pork is very flavorful and tender, but I wish one bowl would atleast come with two pieces instead of one thin slice of meat. The soft boiled egg is not as runny as I would like it to be but the flavor is good. The bowl comes with a good amount of veggies for the whole bowl of noodle. The noodle that it comes with is the thin type of ramen. I got it cooked normally, and it wasn't too soft or too hard, just perfect. Everything from the broth to the noodle is good, but I think the soft boiled egg is not as good as butao ramen's. The broth here is also not as thick as butao's which is a good option if you don't want the thick and heavy soup base. Although its not a place where I would crave to come back often, but this will do when i want a quick ramen fix.

又一間拉麵店!原來港人吃拉麵的熱潮從未減退。這次又來到登龍街覓食。這家拉麵店座落在一間人氣拉麵店對面,而且又是新開張,所以午飯時間也不用等位,毫不猶疑便進去找個座位。它的拉麵也分「白」、「黑」和「辣味」湯底,試食的情況下當然選擇白拉麵最穩妥。配料份量也算十足,桌上也有提供其他調味如胡椒粉、蒜子、薑絲等,最意外的是有我最愛的芝麻!拉麵加上即磨的芝麻,真的可以令拉麵更香口。湯底豬骨味不算是濃郁,沒有令人想將所有湯都喝掉的衝動。因個人喜好,選擇了硬的麵身,可以更有口感。我覺得最特色的就是义燒,廚師將义燒稍稍的燒焦,吃下去時肉的周邊是脆的、中間肉質鬆化,味道很好。待它尚未需要排長龍時,多吃一次也無妨。

最近為了迫令偷懶的自己勤快些,訂下了一個月寫幾篇拉麵的目標以作為主題月,本想以某個出了即食麵的拉麵店作開始,不過看到那人龍…我還是先去對面那一間吧。這間舞心拉麵,也算是一間比較有名氣的拉麵店。以我的商業頭腦分析,開在對手附近一定吸引到不願等的人去吃(自己),只要自己的出品又夠好,自然就會成名了。進去裡面看餐牌,都是最基本的紅黑白,有辣有不辣有重口味,在我而言當然是吃最基本的豬骨湯底了。另外這裡還可以決定麵的軟硬,這方面沒有甚麼所謂就選正常硬度吧。還有一些餃子啊叉燒飯等東西的,不過沒有很大興趣吃。拉麵來到時先鑑定有甚麼東西,基本的叉燒有兩塊,溏心蛋不用加錢就有,讚。另外還有木耳生芽菜青蔥,都是大路的材料。先呷一口湯,豬骨味挺濃的,喝得出是真正用豬骨熬製的,沒有很假很鹹的味精味,不錯。麵是長直身的,鹼水味不重,但又沒有說很大特別。叉燒約手掌心的大小,質感軟熟中帶點咬口,瘦肉中夾雜適量的肥膏蠻不錯。溏心蛋滑溜不過熟,其他配菜亦發揮出正常水準。湯喝著喝著有一點微量的辣,相信是由木耳裡滲出來的。這拉麵水準的確不錯,但要說很出色又不是,沒有一種令人眼前一亮的感覺,比起其他名店,這裡沒有說相差很多,

拉麵來到時先鑑定有甚麼東西,基本的叉燒有兩塊,溏心蛋不用加錢就有,讚。另外還有木耳生芽菜青蔥,都是大路的材料。先呷一口湯,豬骨味挺濃的,喝得出是真正用豬骨熬製的,沒有很假很鹹的味精味,不錯。麵是長直身的,鹼水味不重,但又沒有說很大特別。叉燒約手掌心的大小,質感軟熟中帶點咬口,瘦肉中夾雜適量的肥膏蠻不錯。溏心蛋滑溜不過熟,其他配菜亦發揮出正常水準。湯喝著喝著有一點微量的辣,相信是由木耳裡滲出來的。

這拉麵水準的確不錯,但要說很出色又不是,沒有一種令人眼前一亮的感覺,比起其他名店,這裡沒有說相差很多,不過第一時間會想起的,總不會是這裡。

送上時陣陣豚骨湯的香味及賣相已知質素不會怎麼差吧。
賣相吸引,奶白色的湯中包括一片叉燒、半隻玉子、木耳絲、芽菜和蔥,顏色吸引。

先嘗一口湯,以豬骨湯不是特別濃,但合我口味。不漿口,沒有肥膩的感覺,可以喝完大部分的湯。

店內的麵都是由日本直送抵港。麵條用上白麵條,拉麵較幼。這裡可選擇麵的硬度 (軟/普通/硬)。

湯頭普普通通, 麵更是敗筆
直身幼麵顯得有點過腍, 即使點了硬麵, 吃到一半還是覺得麵太軟
聽到鄰座的男生跟女友說"好在無叫軟麵, 否則軟過米粉!"
如果麵條能帶點咬口質感, 相信能拉普通的湯頭一把

主角試完了(對, 我認為拉麵的主角只是麵和湯)
輪到叉燒和溏心蛋
兩者皆是一般般, 叉燒有點鞋口, 應是肉質過瘦沒有脂肪的後果
溏心蛋則屬合格之作, 不是不好, 只是更好的大有人在
整體感覺, 只能想到四個字, 有形無神

面對對街的豚王訪客絡繹不絕
如此質素的舞心 只能是退而求其次的選擇 (甚至大部人情願排隊, 都不願轉投舞心)
希望店方能改善食物質素, 不要甘心繼續做後補

結果點上鰹魚豬骨濃湯沾麵, 試試看。沾麵湯汁如常比較濃比較鹹, 可是這個汁卻有種濃濃的鰹魚味道, 猶如將一件大大的鰹節放入豬骨湯中同煮一樣。豬骨味道濃, 但是不如超男或一幸舍的湯那樣的來得漿口的感覺。而不知是否沾麵也都一樣, 他有如隱家的沾麵湯汁般, 有一點點粉的感覺, 但是味道卻比隱家立體一點, 最少鰹魚鮮味停在口中良久。沾麵始終也是沾麵, 湯汁比一般湯麵都來得鹹一點, 而吃畢後加上熱水, 就覺太淡。湯汁 -- 8/10

而麵條是用上白麵條, 粗身見方, 有點像幼一些的烏冬。然而不知是否怕沾麵會因放涼後會粘成一舊, 所以店中的白麵碗底依然保持部分清水, 令麵條不會因放涼變乾而變得太粘。 可是因為麵條粗方, 放久後入口的表面感覺也依然稔稔的。而另外, 白麵之上放上一小件青檸, 捏下汁滴, 使麵條入湯汁中去掉膩口, 味道更香更立體。麵條 -- 8.5/10

用料方面, 除紫菜之外, 所有用料上桌前都放進湯汁之中。圓形的卷形厚叉燒兩片, 肥瘦尚算比例均衡, 肉質略嫌粗糙。竹輪魚旦斜厚切件, 無味但口感彈而爽。半熟蛋香而稔口, 不過因為放於濃汁之中, 令口感有點粉, 而且淡香甜味被濃汁弄得很鹹及蓋過原來的蛋香。蔥花香爽, 口感多了輕快之感。

整體來說, 這家店的水平真的不算太差, 但就是好像差一點點靈魂的樣子。沾麵湯汁雖然味道獨特而立體, 但是就昤少了一種令人會可堪回首的味道。不過沾麵麵條可排細緻, 如果用上幼一點的, 而且硬一點, 相信可以更好。不過老實說, 如要以餐廳表現與排隊比例來說, 這店真不應與豚王有這樣大的差別。不過唯一要說的是收費其實兩者差不多之下, 而又無隊排的話, 我也會選擇豚王。所以話有時店舖位置開於旺鋪隔離, 勢走兩極, 最終要看的還是表現與實力吧!
