To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

香港,是什麼時間開始拉麵熱潮的呢? 具體的時間表我已經不能確定。我只記得,當年為了跟風吃一碗《豚王》拉麵,一個人走去中環的和安里,為一碗正宗的日本拉麵,排上個多小時的隊。當年的《豚王》,店子只有幾個位,拉麵亦由日本來的師傅負責製作,很日本的風味。然而,事隔多年,《豚王》不再是和安里的小店,中環的店早已遷至威靈頓街。而且,《豚王》在香港已經有4間分店,在澳門一間,在上海也有一間,已經變成了一個小型的國際集團。而是日,我的加班晚餐,想起食拉麵,想寫一個後《豚王》時代的文章,於是,使隻身走來了。銅鑼灣的店,是《豚王》最早期的分店之一,店子同傳統,我認識的拉麵店一樣,地方是不大的,不過,最傳統的面對爐頭位就沒有了。什麼限定,什麼特別口味都不太合我,來重新嘗試一間拉麵店,我當然去食最簡單大眾化的一個味道,就是最豚骨味道的豚王。說湯底,味道其實是依舊,不過,咁多年來,拉麵店越開越多,說真,味道早已經不及別人,但濃香味道的湯底,爽爽的麵條,香口的叉燒,味道最簡單,最沒有花巧的拉麵,《豚王》的出品,絕對沒有輸。《豚王》的流心蛋蛋是要加點的,所以會另外一隻的上。當我一把蛋咬開,就知道這蛋做得非常之好。流心的蛋黃,帶著濃烈的香甜味道,而這就是人人所說的,溏心蛋。夜晚,加班已經到九點幾,所以我第一次叫替玉,亦即是加食。我第一食的麵條,要了超硬的口感,入口爽爽的,很正。而替玉,我要腍少少,要了普通的,入口依然是爽,但不硬,配上熱力已經減少了的湯,腍一點,更香口好味道。對比起上來,《豚王》已經比不上不少的過江龍拉麵店。不過,他們保持到水準,他們能夠在眾多對手的猛烈攻擊中亦能夠保持到地位,水準沒有降低,是一個重要的因素。 continue reading

鍾意蒜味既朋友會大愛!蒜味濃,加上填紙仔已經寫明要多蒜,黑漆漆烏卒卒,墨魚汁將所有材料都染哂烏卒卒.食緊咩都唔知.其他野都係根據自己喜好選擇,所以拉麵軟硬程度味道濃淡都迎合番個別口味.黑王湯底無原味豬骨湯咁咸咁濃味,叉燒亦可以揀肩肉或者腩肉,揀咗無咩肥肉既肩肉,今次特登試下粗拉麵,麵質扁平,唔錯!同埋豚王會提供檸檬水,果醋,芝麻同醃芽菜俾食客自由添加,雖然好minor,但係小小的細節往往都會令食客暗暗的加分(加咗配料既,我開動啦!)對上一次食已經好耐之前,今次質數好左好多,下次再黎試埋其他王先 continue reading

以前要排隊排好耐既豚王宜家人流都比起以前少,登籠街宜家多左好多大大小小既出名拉麵,而且香港人多數都係新屎坑工三日香總係愛試新野,而豚王呢間老店都開左段時間,已經唔再出現幾十人排隊。今日行經見到,等左10分鐘到就入到去了。豚王湯品濃郁芳香好濃豬骨既味道,湯品質感係比較傑不過味道唔會太咸,適中拉麵我叫既係普通,軟硬適而食落每啖都包住湯品既味道,不知不覺連個湯都差唔多飲晒豬肉看似好肥但食落一d都唔覺!老字號真係要有返咁上下先可以係銅鑼灣立足好食 continue reading
