呢間見到係openrice有75折 就過黎試下 環境好大 好靚 坐得好舒服 佢本身有主菜 再有小小既自助餐 主菜我叫左呢個雲吞定餃子呢碟野😅 佢個皮好簿 不過好煙un 入面都係菜 好香 個汁係芝士忌廉 超香 但佢既汁唔算好多 唔會好膩 不過岩岩好 可以點晒成舊野 面頭既菜好脆好香其他既自助餐就好一般 我最主要係想食生蠔 佢有三種生蠔 最左邊厚身啖味 中間就岩岩好 右邊細隻不過好香海水味較濃味 不過佢全部都係開定 好凍唔夠新鮮 同埋洗得唔乾淨 有好多殻碎 不過呢個價錢都尚可接受 continue reading

已是第二次來Bonstonian, 兩次都用Asia miles換coupon, 再來是欣賞這裡客人不多,冷盆有蠔,熱盆精美。今天三款蠔依舊新鮮甜美,可是我吃的十多隻,差不多每隻蠔都有殼的碎片,令口中肥美creamy的感覺頓失,真煞風景。主菜我的是duck confit, 友人是會angus beef cheek, 一如以往精緻味美,duck 咸香,肉fall off,香軟轜,牛就更好, 濃濃牛油和肉香,入口即溶,十分滋味。甜品生果都是大路貨色,祇有奶凍值得添吃。ps 友人深惡痛絕相機先吃,沒相片。 continue reading

復活節假期期間去了看香港歌手林憶蓮在紅館舉辦的演唱會。演唱會加入了以地,水,火,風為原素的意像效果,是一次視覺與聽覺的享受。事有湊巧,相隔數週,選址了朗廷酒店的美岸海鮮廳為朋友慶祝生日。今次為壽星仔特意安排的,是一個極富藝術感,名為"Elements of Art"的晚宴。為了鼓勵及響應香港的本土藝術文化,朗廷酒店特別與一位香港油畫藝術家合作,以地(土),水,火,風(氣)為題材入饌,拼合出一席揉合這四種元素為靈感的四道菜晚餐(供應期至4月30日。)可以籍此機會介紹一下這位名叫Michael Lam(林煒燊)的藝術畫家。這位七十後的藝術家生於香港,自幼習畫,作品運用大量色彩及富抽象性,風格獨特,得到不少本地及外國藝術愛好者欣賞。一些大型的公司如Cathay Pacific,蘭桂坊酒店等,都有引入他的作品作為室內擺設。今次與朗廷合作的項目,便是以他的四幅油畫新作去演釋四種元素。==============================美岸海鮮廳位於朗廷酒店地庫二樓的位置。已經經營了頗長的時間,海鮮廳感覺仍然整潔新簇,但掩蓋不了那種較為舊式的裝潢。牆上掛了一幅幅風格迴異的掛畫,感覺似是進入了一個畫廊。至於今次飯局的主題,土,水,火,氣四幅油畫,則被懸掛在一條柱的四邊,一進入餐廳便可看到,非常顯眼。喜愛的話,三萬多元便可以把其中一幅掛畫帶回家收藏。由於在訂位時已說明今夜會享用四元素套餐,入座的餐桌上只是放上這道餐牌的介紹菜牌,没有再特別呈上單點餐牌。$728 的四道菜套餐,另跟咖啡或茶。每道菜的旁邊都印有Michael Lam對應土水火氣的畫作作品,一點也不馬虎。跟服務員示意過後食方便開始去準備晚餐,服務員亦接着送來了麵包。送來的都是切好的塊狀麵包,一共有三款不同的口味。伴麵包到來的還有海鹽牛油。麵包算是鬆軟,可惜上桌時都不夠暖。三款麵包没有一款較為突出,伴上牛油同吃也都未能令人留下特别深刻的印象。最先出場的,是以水為題材的頭盤。水,立時使人聯想到大海。林氏的畫作用上藍色為主調,以抽象又帶點兒塗鴉的手法,完成了這道作品。當中不經意的油彩滲滴,正好表現了水由高向低流的獨特性。欣賞抽象畫要自己心領神會,肯恩看到的,是太陽從水平線昇起的景像。大海裡面食材豐富,取之不盡,厨師便從當中選取了北海道帶子及海膽刺身製作了這道刺身他他。他他最低層以蕃茄及青瓜粒組合而成,第二層是切粒的帶子刺身,頂層再舖上海膽及三色堇食用花以作點綴。至於置在海膽旁邊青綠色的慕絲醬,驟眼看還以是牛油果醬,吃下方知原來是青瓜醬,口味獨特。整道頭盤以鮮為本。海膽的鮮甜味最為突出,帶子刺身伴青瓜醬同吃味道提昇至另一層次,底下的青瓜蕃茄粒則爽脆味甘。作為菜單第一道菜,感覺清新,喚醒味蕾。第二幅油畫以土為主題,出現在眼前的,是一塊以黃色為主調的藝術作品。筆法較為雜亂,似要表現這片黃土地上生活的種種矛盾。第二道上桌的菜色,強調食材是從自然的土地上孕育而成。伊比利亞黑毛豬火腿是用上最高級別的Bellota貨色,豬隻自由放在野外的橡木林飼養,只以橡果為飼料,令製成的火腿果香更濃厚。伴上有機雞蛋,也是崇尚無基因改造的天然之美。再加上牛肝菌及黑松露等泥土裡的珍寶,味道豐富。菜單雖以黑毛豬為名,但菜式在視覺表達上卻以蛋為中心,黑毛豬火腿成為一旁的伴菜。雖然如此,味道上黑毛豬仍是菜式中最突出的主角,脂香豐腴,肉味香濃。中間的流心蛋,引誘你不得不去把它刺穿,讓蛋汁流出為所有食材染上一片金黃。與香脆麵包糠,牛肝菌同吃味道也很不錯。不過黑毛豬火腿舖上一層蛋汁後反而會褪減了火腿突出的油香度,若果想吃真黑毛豬的滋味,最佳的吃法還是乾脆直接把黑毛豬火腿往嘴裡送好了。來到火的環節。出現在眼前的,是一隻在天空漫舞的火龍。至於上桌的,是一道包含了龍蝦與羊架的主菜surf and turf。主菜賣相算是四道菜式中最精緻的一道菜。配菜部份食材不算豐富,只簡單配有有一條BB蘿蔔及兩粒青瓜。不過擺盤的配搭細緻,令整道菜式的視覺效果提昇不少。按照餐牌的解說,配菜原本應有紅菜頭脆片的出現,理當可令配菜口感更豐富多變,但卻不知甚麼原因最後沒有出現在碟子上。龍蝦有鉗及尾的部份,厨師巧妙地用尾部把蝦鉗夾着,蝦鉗就可以立正在碟上。仔細嚼過龍蝦肉,龍蝦肉賣相雖然吸引,但蝦肉煮得沒想像中彈牙,鮮味稍遜。至於羊架部份,羊肉沒有膻味,裡面的肉很夠軟嫩,不過外圍部份卻略嫌太老,用刀切割頗費力氣。整道菜最驚喜的部份,反而是伴碟的醬汁。醬汁帶陣陣血橙與紅菜頭清香,令人倍覺開胃。沾上醬汁的肉味道也頓時生色不少。去到最後以氣為主題的油畫,氣氛帶點沉鬱,像是暴風雨來臨前的一道低氣壓,讓人透不過氣。上桌到來的甜品,是藍莓mousse cake。灑上白巧克力片及巧克力餅乾碎粒,展現氣的隨機及不可預測的特質。除了巧克力片及餅乾,甜點還有藍莓醬及藍莓果肉以作點綴,不過菜式名稱中提及到的丁香花,似乎未能找到踪影。所謂的花果香氣,有點欠奉。甜點賣相不俗,食材種類亦見豐富,不過吃下時發覺那美式甜品的通病也浮現了---太甜。無論藍莓蛋糕或週邊配搭,甜味也是太强,就連藍莓本身的自然酸味也被蓋過了。藍莓mousse cake本身的質感亦略嫌軟滑感不足,整體效果普通。套餐跟咖啡與餐茶,點了cappuccino。上桌的Cappuccino伴來一係玉桂條,為咖啡添上一陣玉桂香,有點驚喜。吃過一頓藝術晚宴,菜式的確美侖美奐,不過稍嫌味覺享受的冲擊不及視覺上的享受來得高。據仮面情報所得,美岸海鮮廳將會營業至六月,之後便會重新裝修以新面目及店名跟大家見面。大抵負責人亦洞悉到餐廳開始出視疲態,是時候整頓來過大革新了。若果海鮮廳對大家有種特別意義(例如求婚地點情意結),便要趕及在結業前再來緬懷一下了。温馨提示:到美岸海鮮廳用饍,不得不提開飯網的一張半價優惠券。一道價值$860的四道菜晚餐,憑券可以半價的優惠去享用,性價比極高。 continue reading
